Crockpot Thursday: Scalloped Potatoes & Ham

March 10, 2011 By Melanie Roberts 13 Comments

One word….YUMMMMMMMYYY….. this was a super easy and wonderful dish. You can easily prepare this and bring it to a potluck or family gathering. We all loved it….

This is what you need:

6 Large russet potatoes, sliced into ¼ inch rounds
1 ham steak ( about 1 ½ pounds) cut into cubes
1 can condensed Cream of Mushroom soup
1 soup can water
1 cup shredded Cheddar Cheese
Salt pepper, or seasoning to taste
*we added 1 can of mushrooms*

This is how you make it:
1.Put potatoes and ham in Crockpot ( the fancy word was layer.. well I don’t do fancy, I just toss it …lol)
2.Combine soup, water, cheese and seasoning in a mixing bowl; pour over potatoes and ham.
3.Cover and cook on HIGH for 3 ½ – 4 hrs. until potatoes are fork-tender…..

Serve with Veggies, bread or even pork chops if you like….

My Tween and Teen loved it as much as Hubby and I did… we are all BIG Potato lovers, we could eat them 7 days a week… To my surprise this dish was not heavy or too creamy at all; it was actually kind of light and even a little “soupy”. Hubby prepared the taters the night before and had them soaking in water , so when he got home from work he just tossed them in the Crockpot, he thinks them sitting in water overnight gave the dish a little extra liquid, which I didn’t mind.. and it was really really good.. you could even leave the ham out and just make the potatoes and add a meat on the side. This will be a new favorite in the house…

I would love to try some new recipes and feature some of my readers crockpor favorites….If you have a favorite Crockpot recipe,  just leave me a comment or send me a message…..

Thanks for sharing this recipe. I’m growing tired of making the ole’ betty crocker scalloped potatoes. The addition of ham makes this even better!

I used to make something similar except with cream of chicken soup. Using mushroom and adding mushrooms too? Sounds even better.
