Hawaiian Chicken and Rice – Slow cooker night

What a wonderful time we had so far cooking out of this Fix-it and Forget-it Christmas Cookbook: 600 Slow Cooker Holiday Recipes; They all are easy and simple but yet tasty and wonderful home cooked meals for your family to enjoy.

Friday Night we had a little mishap happen …

I prepared the dinner as usual before I left the house for work; Hubby comes home mid afternoon and I instructed him to turn it off, we had a soccer game that night and we would be home way later than I’m usually home. So he turned it off like he was told.

We got home around 8pm and the dinner is sitting on the counter, I took one look and I wasn’t sure if the pineapples and oranges in this dish did ok sitting on the counter for 5+hrs., so I had no choice but call a McDonald run, I did not wanted to take a chance, it smelled kind of funny… So I’m sorry I won’t have any “after” dinner pictures, but still wanted to share this with you, it looked sooo yummy going in and I will for sure try it again in a few weeks. I love fruity stuff.

Our Menu for Today is :

Hawaiian Chicken with Rice

This is what you need:

3 lbs. boneless, skinless chicken breast
16 oz can pineapple slices, drained
15 oz can mandarin oranges, drained
2 Tsp. cornstarch
3 Tsp. brown sugar, packed
2 Tsp. lemon juice
1/4 tsp. sale
1/4 tsp. ground ginger

How to make it :
  1. Toss everything in your crockpot
  2. mix the cornstarch and the brown sugar with the lemon juice, add to the crockpot.
  3. Close the lid.
  4. Let cook on high for 3 hours or on low for 6-8 hrs.
