Brunch Sunday: Apple Casserole

In Germany we hardly ever eat Scrambled eggs, bacon or even Pancakes for Breakfast. That is usually a dinner or lunch item. But I love to have “sweets” for breakfast and being here in the US for over 15 years now hasn’t changed that a bit.

I love to spoil the family with yummy sweet dishes that are super easy and yummy. The other day I made an Apple Casserole, it was super easy and was sooo yummy and something totally different than what  the kids know from here.

Hope you enjoy it as well…..

This is what you need:

  • 4 Apples, peeled and cut in slices, cubes any way you like them
  • 8 slices of white bread or French bread ( I prefer the French bread, but regular white bread is probly cheaper), cut into cubes
  • 4 or 5 eggs ( if you like more egg fluffy taste I use 5 eggs if you rather have less egg use 4… you can play with that and adjust to your taste… eggs are great like that Winking smile)
  • Milk ( per Pudding instruction)
  • 1 pack Vanilla pudding ( the cooking kind)
  • sugar ( if the pudding package asks for it)
  • 1 Table spoon Lemon Juice
  • Cinnamon to taste

This is how to make it:

  1. Mix the milk and the pudding powder in a bowl; add  the apples and the bread
  2. Separate the eggs and mix the egg yolk with the sugar, cinnamon and lemon juice, mix with the bread mixture;
  3. Take the egg white and beat till it’s the white stiff consistency, mix under the bread mixture; be careful not to mix too well or the egg whites will turn back to liquid.
  4. Grease a baking dish, preheat the oven to 350 and bake for about 35-40 min till the top is nice golden brown.

You can substitute the apples for plums, cherries even pears if you like. Enjoy

What’s the texture like in this dish? Like a soft bread pudding? I’d probably add some crunch by adding some walnuts.

Sorry … Just updated.. Thanks for letting me know.. I use about 4 or 5 eggs depends on my mood that day..lol.. :-) I love eggs in my dishes and usually the more the better, but 4 if I want a light egg taste and 5 if I want a more intense egg taste :-)

wow, and here my daughter gets upset with me for giving my grandson sweet things for breakast. Now I can have an excuse and show her this. A recipe I’ve never heard of but looks so delicious!
