With school back in session and slowly everyone and everything getting back to normal, I like to sit down with a nice hot cup of cocoa and read the #SamsClubMag. Have you ever checked it out? I love being a Sam’s Club member, they always have awesome things going on and one benefit is the magazine.
Did you know that August is Health Awareness month? Yup, learned that from the Sam’s Club magazine. You should check it out and see what awesome new things you will learn.
The Healthy Living Magazine is always jam packed full with things that every mom, dad and grandparent needs to know. I learn lots of interesting facts every time I check out the magazine, it also has recipe ideas and quality articles that are tailored to your everyday needs. This month they are talking about Rejuvenating yourself through Yoga and Eat your Way to better healthy, along with many more interesting articles.
Don’t forget to check it out, it’s Free! This month the featured recipes included coconut. I knew that Sam’s Club has a large selection of coconut products from coconut flour to coconut sugar and coconut milk, I decided to make my own recipe to share with all of you featuring what else, coconut.
Cooking and baking with coconut products isn’t all that hard, there are a few rules but mostly once you adjust and get used to this powerful ingredient you will do just fine.
You can use coconut milk anytime you are using regular milk, very easy to substitute, so give the kids their cereal with coconut milk or make that pudding recipe that you’ve been wanting. Coconut milk is healthy, delicious and perfect for your everyday uses, too.
As for the coconut flour, when substituting coconut flour for all purpose or whole wheat flour, use the same amount of flour but add 1 extra egg (on top of what’s called for in the recipe) for every ounce of coconut flour. On average, 1/4 cup of coconut flour is equal to 1 ounce. To give you some guidance.
We use coconut oil quite frequently in our home from baking to cooking it’s easy to use and has a great coconut taste, a lot of health benefits as well. You can use it for so many different things even on your skin! I know, I know, just do your research and you will find a lot of wonderful health benefits.
The one thing I never used is coconut sugar, but since Sam’s Club had it in stock, I just had to give it a try, after all who makes Pancakes without sugar, right?
Once all was said and done my Coconut Lime Pancakes ended up to be sugar and gluten free and took no time at all to make. My family loved them and my husband said that the sour cream topping rounded out the coconut flavor and gave it a nice touch. Love hearing that!
Now wasn’t this super easy? The pancakes are delicious, just like regular flour pancakes but a lot healthier and completely gluten free! You couldn’t tell and if you don’t tell no one will know how healthy and powerful these pancakes really are; perfect for a great breakfast for the entire family.
My sour cream topping is super simple as well and trust me, it’s different but different in a good way. You just have to try it. My daughter saw sour cream and immediately said “ I will not eat that!”. Somehow she did end up with a small amount on her plate and boy was she surprised, she quickly named it her favorite topping ever!
Sour cream topping mixed with the coconut sugar gives it a great flavor, add fruit and you got yourself a special treat!
Isn’t it fun all the amazing things you can find at Sam’s Club? We love the food tasting on Saturday afternoons and sometimes just head over to Sam’s Club to see what they have to offer, my daughter calls it her “lunch date with Sam’s Club”, lol.
I also encourage you to visit your local Sam’s Club on Saturday September 12 for the free health screening, while you are there check out all the samples they will have to offer and make it a fun family event.

Of course you don’t have to go gluten free to enjoy these amazing Coconut Pancakes or any other recipes that include coconut flour, but you will quickly realize how amazing the taste is and how wonderful you feel after a satisfying meal that is healthy and less calories.
