Fresh from the Farmstand: Recipes to Make the Most of Everyone’s Favorite Fruits & Veggies From Apples to Zucchini, and Other Fresh Picked Farmers’ Market Treats

One of our favorite cookbook authors/company has released another wonderful book. We just LOVE LOVE LOVE all of the Gooseberry Patch books and this Farmstand book isn’t any different. It is jam packed with 240 tasty, easy-to-make recipes and it sure is a favorite in our house.

I just love how the book is categorized with lots of yummy recipes from Freshly gathered Breakfast, Market-Basket Soups 7 Breads, Garden-Fresh Sides & Salads, Farmstand Feasts, Summer’s Best Appetizers to Berry Best Desserts; there is something for everyone to enjoy.

Another thing I always LOVE about the Gooseberry Patch recipes, they are true and made recipes by people like you and me. You know they will be great; nothing Fancy Schmanzy that you can’t even pronounce; NOPE only yummy dinner ideas that other families already love and enjoy.

My Tween decided to cook dinner the other day and he immediately reached for the Gooseberry Patch “Fresh from the Farmstand” book and prepared Cherry Tomato Meatballs for all of us…. It easy delicious….YUMM and sooo simple even a Middle Schooler can do that.

This is what you need:

  • 3 lbs. lean ground beef
  • 2 c. cracker meal or Italian flavored dry breadcrumbs
  • 5 T. zesty Italian salad dressing mix
  • 1 oz. pkg. onion soup mix
  • 1 clove garlic, chopped
  • 1 egg, beaten
  • 2 T. milk
  • 3 28oz. jars spaghetti sauce
  • 1 to 2 T. olive Oil
  • 1 lb. cherry Tomatoes

This is how to make it :

  1. Place beef in a large bowl; add cracker meal or bread crumbs, mixes and garlic. Mix into beef, using your fingers. Whisk egg and milk together; add to beef mixture and work through. In a large saucepan over medium-low heat, bring Spaghetti Sauce to a simmer. Heat oil in a separate large skillet over medium heat.
  2. While oil is heating, roll some of the beef mixture generously around each tomato. Add meatballs to skillet and brown on all sides. As each meatball browns, transfer  to the spaghetti sauce.
  3. Continue rolling tomatoes in beef mixture and browning, till all tomatoes are gone.
  4. Once all the meatballs have been added to sauce, simmer 15-20 min. If you had more tomatoes then meat mixture, you can add the leftover tomatoes, cut in half into the spaghetti sauce; or if you have more meat mixture then tomatoes, just form meatballs and brown them…:0)

This makes about 8-10 servings.. plenty for my family of 5 and soo delicious; the Tween did a great job… YUMMMM

Love Gooseberry Farm’s cookbooks. I watch for them at garage sales and flea markets. I think they are just a down home cookbook.

I LOVE Gooseberry Patch! I can’t wait for all the summer vegetable to start filling the Farmer’s Market….homegrown are always the best! Now if I could just have the cookbook to go with all those fruits and veggies……!!!!
