LunchBox Tuesday : German Spaetzle

Spending the weekend with my friend from Germany we had a lot of time talking about our favorite childhood recipes and ideas. She reminded me of one of my all time favorite recipe that is so simple to make and is a traditional German Dish at least where I’m from in Bavaria.

It’s called Spaetzle ( pronounced Spaehtsle). I thought it would be cool to share this simple dish with my readers; it can be fixed as a stand alone lunch meal or as a side item with Meat and gravy instead of pasta.

This is what you will need for the basic recipe:

  • 4 cups all-purpose flour
  • 5 eggs
  • 1 teaspoon salt
  • 1 cup water ( or 3/4 c water and 1/4 c milk if you like) or a bit more, the dough should be stringy yet coming off a spoon 🙂

This is how to make the basic Spaetzle:

  1. In large bowl, combine flour, eggs and salt. Add water a little at a time to form a soft dough.
  2. Boil 2 quarts of water in a large pot, add some salt to your water. Squeeze dough out into the water  by pressing through a colander with large holes. When noodles float to the top of the water, they are done (3 to 4 minutes). Serve as a side or main dish.

For the main dish I like the Cheese Spatzle, once the basic Spaetzle are done, add a little bit of butter and let cheese melt in the pot over the Spatzle, make sure to stir well so the cheese is distributed evenly.. I like any cheese like Swiss or my all time favorite is Gouda. Add a salad as a side and lunch is served.

For a side dish serve with anything like Beef or Pork Roast and Gravy, or anything you would use Noodles with.

Enjoy… these are so yummy and so simple to make. All the kids this weekend loved them and the hubby did, too.

    I love spaetzle! Everytime I hear of it or cook it, it reminds me of my grandma and Aunt Bonnie. I grew up eating smore beans and spaetzle. It was a pork roast my grandmother would cook in a rich brown gravy and fresh green beens, which she would spoon over the spaetzle. In July 09, my aunt was coming to the end of her life here on earth. The family was gathered at her home, reminicing of happier times. Someone mentioned the smore beans and spaetzle. To my surprize, at the age of 56, I found out that smore beans is not the actual name for the dish. Turns out my Aunt Bonnie loved it as a child too. She would always ask for seconds….

    This is one of my absolute FAVORITE German foods — but I have never been able to make it correctly. I especially like to fry it in a little bit of butter! YUM!

      Ohhh butter is yummy on it, I also love to scramble and egg over leftovers, we were poor and that is something I remember from home, add a green salad and we had dinner

    I have eaten spaetzle a few times but never knew that it was easy to make once you get the hang of it. I’ll have to give it a try sometime.

    I miss spaetzle, brotchen, and especially the bakerei. I lived in Germany for total of 12+ years (my dad was Army). Still is my favorite place!!! Thanks for sharing.

    I’ve heard of spaetzle before but never realized how easy it is to make. I believe my Grandma used to make it for my dad but when she passed so did the recipe, or at least someone to make it. I will definitely give this a try. I like the idea of adding cheese and I may even add some vegetables.
