You may remember that I was contacted by the lovely folks at Country Crock to see if I would like to join their Casserole Club for Bloggers. I was super excited and couldn’t wait to team up. I love to create recipes and share them with my readers and casseroles are perfect for busy families like us and I know you are just as busy.

Last month I created the Chicken & Veggie Mac n’ Cheese that was a big hit in our home. My challenge this month was to create a simple dinner idea that would include some of the ingredients that were in my second package, but I was also encouraged to make it my own, again.

The package included a can of black beans, a can of Mexican corn and a few kitchen utensils, along with a dinner idea card for Mexican Beef & Corn Casserole. This one was a simple one for my family, because we have a favorite Casserole dish that would fit the bill; checkout how simple it was to create our Mexican Pasta Casserole and the best part, it will only cost you about $6 if you watch sales, coupons and stockpile like we do. If you don’t, not a problem at all, it’s still a super cheap, yet filling dish that can be divided into two meals, one for now and one for the freezer for a super busy day.

This is what you need for the Mexican Pasta Casserole

2lb Hamburger or ground chicken, turkey, pork ~ depends on your likes and what’s in your freezer
1 box Penne ( any pasta you like ~ I like Elbows)
1 Jar Salsa
1 Can Black Beans
1 can Mexican Corn
2 table spoon taco seasoning
1 pack Shredded cheese
2 tablespoons Country Crock Butter ~ to grease the casserole dish

This is how to make the Mexican pasta dinner

  • Cook pasta; rinse and put aside;
  • brown ground beef, add taco seasoning to beef, when meat is done add the salsa,   bean, corn and mix all up.
  • mix your meat mixture with your pasta
  • add everything to your greased casserole dish
  • sprinkle with shredded cheese ~ we love los of cheese
  • put in the oven on 350 degree for 20 min ~ to melt the cheese;

Once done… you can make two meals out of this; take half and serve for dinner, the other half you can put in a freezer bowl for a freezer dinner down the road, you know things always get busy and this will be a nice dinner to pull out and re-head when time is short.

There are 5 of us and always have lots of leftovers for the freezer and the kids still get full. It’s a simple dinner, but so delicious. We top our Mexican Pasta with guacamole and tomato salsa or just eat it with sour cream. The choice is yours.

    I want to try this recipe. It’s something that my entire family would love for dinner. I would try elbow macaroni instead of penne like you did, but either sounds delish!

    I can’t mix dairy + meat for religious reasons.. do you know if there’s a vegetarian option or one that doesn’t have either meat or cheese, but still tastes delicious?? Thanks. 😀

      It actually still is great either if you leave out the meat and add the cheese it is great as well leaving the cheese out and adding the meat… really totally versatile and will be great either way.. give it a try
