Monday Meal Plan with Allergies, what a challenge

It’s Monday and things sure have been crazy at our house. We are getting back into Planning our Meals, week by week. It’s been a while since we did it faithfully, but with us starting a Happy Healthy 2013 motto, this is another step in being Happy and Healthy and keeping our family and budget in check.

We also have a little hurdle to overcome with our Meal Plan each week; my middle Teen was just diagnosed with ….. are you ready for this…… Chicken Allergy. Yup, he is highly allergic to chicken.  The pictures below are some of our favorite chicken recipes;

Sounds crazy, I know. Honestly, we didn’t believe him for a few month either. We thought he just didn’t want to eat chicken and made up a story. Chicken had been so much cheaper lately so we stocked up on chicken in every which way and used it a lot during the week. Plus being on weight watchers, chicken was a better choice as well.

My Teen always said he can’t eat the chicken, he gets sick. I’ve never seen him actually get sick, so it was a joke for a long time in our home when we ate chicken and he came up with an excuse every time. A few weeks ago, we had chicken meatballs, they were delicious, flavor full, lots of amazing fresh herbs and breadcrumbs just wonderful. The teen had no idea it was chicken and no one else told him, we all knew, but wanted to see his reaction. He actually LOVED them!! He raved and Ohhh’s and Ahhhhh’s for a while and grabbed seconds. We all kind of just smirked at each other and went on with dinner. Thinking… well.. he likes it after all.

About an hour after dinner, the Teen walked up and said “This was chicken, wasn’t it??, kind of pail in the face. We all said “yes, wasn’t it yummy"?. He looked up and said,my throat is closing up and spend the rest of the night in the bathroom, in terrible pain, kind of like food poising. Until the chicken left his system, he was sick. Sicker then a dog. I felt terrible, I was in tears knowing that I did this to my baby.

Still a little in disbelieve, who is allergic to chicken…. I goggled. To my surprise, tons of information appeared about chicken allergy and people who had the same symptoms as my son. I was amazed!!

Some people are allergic to everything chicken from broth to the eggs and of course the actual chicken. So far my son is only allergic to the actual chicken and he can eat eggs and broth without a problem. The strange thing, he’s 13 now; he’s ate chicken most of his life until maybe a year ago. This all the sudden came, maybe it will all the sudden leave, but until then we will not take any more chances.

The moral to the story, if your kids are totally against eating something, maybe they have an reaction, you never know. I learned the hard way and from now on he will NOT get any chicken at all. W still cook chicken, but make a separate meal in separate pan for him.

Do your kids have strange allergies or food allergies? Would love to hear about it, we’ve never had to deal with any kind of allergy, guess you are never too old to experience them.

Does he have the same reaction to turkey? You can sub ground turkey anywhere you would use ground chicken. What about eggs? (just curious) So sorry y’all are dealing with this. My MIL is a nurse and sees a lot of sudden onset allergies (especially meat allergies). Sometimes it is due to the thyroid being in crisis. This can be checked with a blood test. The trick is that you have to ask for the full, extended thyroid blood panel and not just the one they normally run. Good luck!

Hi Jan.. interesting about the thyroid. I will have to check that out; I myself have thyroid issue; had it ever since I was in my teens. I will have to request that test, thanks for mentioning that. No he actually can eat turkey and that’s what we’ve been using a lot; he’s ok with that. He can eat eggs and drink chicken stock, so far it’s only the actual chicken.

My daughter is allergic to gluten and I didn’t believe her at first either. It is weird how these allergies pop up. She’s also allergic to shellfish but she loves it! One the rare occasions she begs for shrimp I give her allergy meds in advance.

Thankfully no one in my family has food allergies. We do avoid the common artificial food coloring Red 40 because of how my youngest acts after digesting it. He gets very aggressive just 5 minutes after even a sip of Kool Aid or a single bite of a Pop Tart. This had made choosing meals and snacks a bit different but, in a good way. We eat a lot healthier now by avoiding foods with artificial colors and flavors. When researching the possible causes to my little one’s behavior I discovered that Red 40 by itself is actually a pesticide! This knowledge made removing it from our diets an easy decision.

Such a good lesson to share! I think you did what many a mom would do as what child doesn’t try to get out of eating certain foods from time to time? Funny enough, my sister was allergic to peas and my mother did the same thing, made her eat them until one day they finally figured it out. Weird what the body reacts to!
