Recipe: Mexican Penne .. Cheap Dinner

We made a simple and cheap yet.. yummy dish for supper tonight.. I wanted to hare it with you in case you are looking for some “cheap” dinner ideas for next week ……Most of these items have been on sale and were either Free or super cheap the last few weeks……We spend less then $6 and this lasts for 2 meals for my family of 5 !!!!

This is such a simple and cheap dish, but everyone loves it. I’ve won a few contest with this dish already, nothing major just between family and friends and a few couponing classes… because it is so simple yet very good and different. Also beware, this dish will have plenty of leftovers, I usually make this and divide it into two and freeze one half and serve the other half for dinner… lot of food there and this can be served at a party, quick dinner or just when you don’t know what to cook… Best part is, all these items have been super cheap the last few weeks and if you stockpile, you probly have most of them.


You need:
2lb Hamburger ($1.99/lb)
1 box Penne ( any pasta you like) ( Free)
1 Jar Salsa,($.50/ jar)
1 Can Black Beans ($.25)
1 can Corn ($.25)
2 table spoon taco seasoning, ( $ .20/ pack)
1 pack Shredded cheese ($.66)

Direction:

Cook pasta; rinse and put aside; brown ground beef, add taco seasoning to beef, when meat is done add the salsa, bean, corn, mix all up.

In a baking dish add some pasta and cover the pasta with the meat mix; layer another pasta layer and a cheese layer till you used it all up, last layer is cheese again, put in the oven on 350 degree for 35 min; then serve
OR
what we do is make one layer of pasta one layer of the meat mix add a pack of cheese and bake, the remainder I mixed the pasta and meat and put in a freezer bag for a 2nd meal..


Once the meal is cooked you can add sour cream or avocado etc… YUMMYYY…so easy and quick and sooo different and good

      Hi Sarah… that’s what we do “out of the pantry”… and so yummy, you can add tomatoes, lettuce and all of your favorite taco toppings if you like…. 🙂

    do you think instead of pasta the rest is thick enough to go inside a tortilla? or make it like a lasagne in layers using corn tortilla

      Sandy.. most defiantly.. you can add it inside a tortilla and yes.. making a tortilla lasagne works well, too.. and is very yummy 🙂
