What’s cooking ~ Monday Meal Plan

Did you turn your clock back an hour?? I sure love this time of the year and wish we could keep it this way all the time. I struggle all year when we jump forward and just can’t get used to missing out that one hour. Am I the only one? What time of the year do you like best.

I had an extra hour on Sunday and was able to get so much more done and even did a few coupons Match up deals at Walmart, have you matched BoGo Deals yet? If not.. AWESOME is all I can say; I’m not the biggest fan of Walmart, always busy, overcrowded and not enough registers, but I go early in the AM and I did BoGo matchups for Publix and Winn Dixie and ended up saving an addl. $30 by shopping for all the BoGo deals at Walmart, I was impressed and think I will do this more often from now on. What is your take.. like…dislike..??

Well, with all the deals I got, I had no problem creating a simple Meal Plan for the week, because simple is the way I need to roll this week. The Teen joint the wrestling team, totally unexpected and he just announced that he has two tournaments both in the evening this week… WHAAAAA… really, a little notice would have been nice. Oh well, I will dish up something quick.

Tacos in a Bag,courtesy of In Mama Maggie’s Kitchen

This is what we are cooking this week…

Monday:           Taco in a Bag

Tuesday:           Sausage & Pasta Fall Skillet

Wednesday:      Butternut Squash Soup with Croutons

Thursday:         Chicken meatball Parmesan Subs

Friday:              Breakfast for Dinner ….

Saturday:         Simple Chicken & Veggie Casserole

Sunday:           Mom’s night off… Dinner at Mimi’s House

So, I’m dishing up all this, what are you dishing up? Would love to hear it and if you need more ideas, be sure to visit my Pinterest board  or head over to I’m an Organizing Junkie to check out many more Meal Plans.

You and I are on opposite sides, I hate this time of year. I much prefer being able to get out at the end of the day and play with my kids instead of being stuck inside. We are very active so Spring and Summer work a lot better for us to play.

I think simple is the best way to go almost all the time! 😉 I guess it’s universal to Walmart about the lack of open registers, huh? You’d think they’d go out of their way on a nationwide basis to get rid of that perception!

I can’t remember the last time I went to a Walmart. We are able to get good deals at local farmer’s markets. In Southwest Florida we have a lot of fresh vegetable to choose from year round for which I am very thankful. That’s awesome you have little ones that wrestle!

I have about a half of a huge butternut squash left over from another recipe, all cubed up and waiting in the refrigerator for the next recipe. The squash/pear combo sounds interesting, may give that a try instead of my usual squash soup recipe.

I’ll second the thoughts on WalMart. Add to that my closest one being near a mall and a headache to even get there in the first place, so my visits are pretty few and far between.
