What’s cooking Monday Meal Plan

We spend all weekend with my husbands family; between a wedding and grandma’s big Birthday we had a lot of family get-togethers and the kids had a blast. They got to spend time with cousins that live near and far and us adults got to catch up with everyone that we usually only see at the Christmas party. What a fun, but busy weekend we had. The weather in Central Florida is amazing this time of the year and we have to enjoy the great outdoors as much as we can, soon the outdoor days are numbered and we are confined to the indoor living space.

Yes, you heard that right. Florida isn’t like on TV or in pictures always pretty, always amazing and always the best place to live. While others enjoy summer time we will be stuck inside the house from mid May to mid September because it’s just to stinkin’ hot and humid outside. Yup.. you can call it our “winter blues”..lol.

Last week we posted a delicious German Potato Gratin and Zucchini Fries, did you check it out yet? My family raved about it at the Family Get Together and everyone wanted to have the recipe; since they loved it so much I decided to include it in the Meal Plan so you can check it out, too. This is what we are dishing up this week…. what’s cookin’ in your kitchen?

Monday:                  Enchilada Lasagna with Salad

Tuesday:                  Philly Steak Sandwiches

Wednesday:              White Asparagus with Potatoes and Greek Yogurt Dressing
                                                    and Pork Chops

Thursday:                Baked Stuffed Salmon and Red Lobster Biscuits with Salad

Friday:                    Roasted Chicken with Spring Veggies

Saturday:                 Grilled Hamburgers with Cesar Salad

Sunday:                   Mom’s night off … Mimi will dish up a Sunday dinner for us

Now you know what we are dishing up. Not really my regular and I’m not sure how I feel about this week. Hubby was the one that made the meal plan; hope it will work out, especially since I only see two meals that my Teen can eat, so I have to come up with alternatives that I already prepared for him in the freezer.

    I think I am in love with the Kraft Fresh Take products. They are $1.98 at my local Walmart (in Kentucky) and there have been quite a few $1 off coupons lately so I have been buying (and using) them like crazy. I hadn’t yet thought of using them to make vegetable side dishes. Will have to give that a try. :0)

      Hey Wendy… I was surprised, too that they were only $1.98 and I also had a $1/1 coupon, what a cheap dinner it made but sooo delicious … You can try it with green tomatoes, squash and many other veggies… YUMM.. perfect for the summer.

    Looks like you had a super fun and active weekend! Funny how our seasons are reversed in terms of how we view them. I remember the heat, though, from spending summers with my grandparents there. They always kept us in from noon to 2 to miss the worst heat of the day.

      Lol barb.. I remember back in the day I was always told to stay inside between noon and 2, too.. the funny thing is now at 5PM it’s hotter then at noon most of the days, crazy.. and then I think back to the old days when it was the hottest at Noon..lol

    I always have some Kraft Fresh Take in our Fridge so this will be good. Since my daughter is having surgery, my mother in law is cooking for us one day too. Woot on not having to cook!

    I hope that I will be able to meal plan as efficiently as you do some day soon. I would love to hear some of your tips on how to manage preparing meals and meal planning for moms on the run. My schedule certainly feels like that sometimes. You are awesome!

      Mhh that’s an idea.. I can work on that on some tips how we busy moms on the go can plan meals more efficiently and quicker… will get on it and be back in a few weeks… so stay tuned 😉

    I was going in the freezer to pull out a ribeye for the philly steak sandwiches, but got distracted by the beef broth and stew meat sitting next to it instead. At least your post reminded me to go to the freezer to plan ahead! 🙂 Weather turning colder in the midwest right now, soup sounded better for tomorrow. Maybe the philly steak will make an appearance later this weekend as I now have a craving for that as well.
