Crockpot Thursday: Cheese Potatoes

March 3, 2011 By Melanie Roberts 8 Comments

We had a bunch of those Frozen Potatoes in the freezer and we needed to eat some of them. Hubby found this recipe and wanted s to try it. Cheese Potatoes. It was actually pretty good, if it was a bit soupier it would have tasted just like a potato soup. It really was yummy, you can also add some chicken with it for meat… lots of things you can do.

This recipe won’t cook all that long, so don’t make this if you are planning on a daytrip somewhere… It will be done In about 4hrs.

This is what you need… super simple.

  • 1 (32 ounce) package frozen Southern-style hash brown potatoes
  • 2 (10.75 ounce) cans condensed Cheddar cheese soup ( we used Cheese Tortilla Soup and it was yummy)
  • 1 (12 fluid ounce) can evaporated milk

This is how you make it:
Grease your slow cooker with cooking spray or shortening. In a large bowl, stir together the hash browns, cheese soup, evaporated milk.. Pour into the slow cooker. Cover, and cook on low for 4 hours ( you could even try 3 hrs on low, my husband said the 4 was a bit long).

How did we like it?
That’s it….. isn’t that simple. It was soo yummy, next time I will add about a cup of chicken stock to make it a little soupy like… other than that it was yummy and can be adapted to so many different things. By the time I got home from the office this is all that was left… as you can see, not a very pretty picture, but almost all gone J

Wow! Where have you been all my life! This would go over really well with my family, and they’re a collectively picky bunch (but we’re all picky in our own ways, which makes it really hard!).

If you need more recipes, I LOVE Fix it and forget it Slow Cooker Christmas cookbook. It’s not the usual crockpot cookbook that has more breads and desserts than meals (I can make a cake in my oven a lot easier than in my crockpot, thank you very much), and I’ve been happy with everything I’ve made from it. I got it from the library first to see if it was worth buying. It was! But it’s really not for Christmas 🙂
