Spring has arrived…. I love Spring and spending lots of time outside with the kids and the family. This makes for a wonderful time to use your crockpot, why slave on the stove all day in a hot kitchen when you can let one pot do the cooking while you have fun outside….This week, while I was at work I came home to a wonderful meal, that didn’t take any time at all. About 2 minutes before I left the house to toss it all together and then maybe 5 minutes after I got home to get it ready to serve…. Soo simple. This was delicouse… I’m not a Beef kind of girl at all, but this was good. The meat was tender and had a wnderful beefy tast to it.. I was impressed and this will make it on our meal plan very soon again…YUMMYYYY
This was also fairly cheap, we bought 2 lbs of Beef roast for about $5 and then a pack of rolls, we added a side salad so in the end it was about $7 for this meal for the 5 of us, that’s $1.40 per person for dinner… and we had leftovers…
This is what you will need:

1 ( or more) pounds of bottom round beef roast
1 teaspoon salt
1/8 teaspoon pepper
2 Cups Beef Stock
1 bay leave
3 gloves of garlic, minced
Crusty Sandwich Buns
This is how to make it:


Toss everything into the crockpot, cover and cock on low for 8-9 hours; once you are ready to eat, remove beef and slice or pull, whichever you prefer; toast sandwich buns and spread some butter, pile beef on the bun to make a sandwich. Serve with strained broth on the side for dipping…
