I love to bake and cook some of the German dishes that I grew up with, it’s not always easy to find the right ingredients here in the US and I have to improvise a bit. I wanted some German cheese cake, which is completely different then American cheese cake. We use “Quark” in our cake and that is at least in Florida impossible to find. I’ve heard other people found it up north. I so wish we had it here.. so I found a different recipe and yet it’s not 100% the same it was pretty good and I wanted to share it with you guys. I love to introduce you to my culture and my country and what better way than to share some recipes with you.

This is what you will need:
1 16 oz small curd cottage cheese
2 8 oz pkg cream cheese, softened
1 1/2 cups sugar
4 eggs, beaten
1/4 cup cornstarch
2 tablespoons lemon juice
1 tablespoon vanilla extract
1/2 cup butter, melted
12 oz. sour cream
graham cracker crumbs (for crust)
This is how to make it:
- Butter a 10-inch SpringForm
pan well. Dust bottoms and side with graham cracker crumbs liberally. In a food processor or in the bowl of an electric mixer using the paddle attachment, mix cottage cheese and cream cheese on slow speed until smooth. Beat in sour cream.
- On high speed, gradually add sugar and eggs for just a few seconds. Turn speed to low. Add cornstarch, lemon juice, vanilla extract and melted butter.
- Pour into prepared SpringForm
pan.
- Bake at 325°F until firm around the edges, about 60-70 minutes.
- Turn oven off. Allow cheesecake to remain in oven with door closed for 2 hours.
- Cool on wire rack. Remove from pan and store in refrigerator. Can be frozen.
Now this is not the original way we make Cheese cake in Germany, BUT … it’s pretty good and as close as I can get with what I have here… Guten Appetit

This looks like a great recipe – I’d try using Ricotta instead of cream cheese though for a creamier taste, although I know that’s more Italian-style. True German style cheesecake uses quark, or milk curds, not cream cheese.

I’ve seen quark in the stores in California, usually Vermont Butter and Cheese Company brand…it comes in a little tub with a green label. They do have a website and Facebook presence, so they should be able to tell you if they supply to Florida stores or ship you some quark themselves. I hope it works out for you!

Love cheesecake and love that you are offering some German recipes. I bet you could find Quark online somewhere; you can find almost anything online. Or, if you are ever in Atlanta, they have a huge International Farmer’s Market that has almost everything from all over the world. What is Quark anyway? A cheese or dairy product? This recipe looks delicious. Thanks.

Judy; thanks for the comment, I know they sell Quark online BUT it is very expensive and shipping would have to be overnight since it has to be cold etc.. I just can’t afford that, BUT always keep my eyes open for it anywhere I go…
