Brunch Sunday: Breakfast Casserole

June 5, 2011 By Melanie Roberts 3 Comments

I love it when I can whip up a quick Breakfast for the family on Sunday. This recipe is super easy and the kids love it. You prepare it the night before, clean the kitchen and when you wake up, pop it in the oven and let it bake… simple and delicious.

You need:
8 slices of Toast ( I like to use French bread, too), cut into cubes
1 pack Ham ( or Sausage would work well, too Smile) cut into smaller pieces
8 eggs
1 package shredded cheese, of choice
2 cups Milk
2 cups heavy whip cream

This is how to make it:
Mix Eggs, Cheese, Milk and whip cream, add Ham and Bread, mix well. Cover and place into the refrigerator over night. The next morning pre-heat the oven to 350F, put the casserole in the oven on 350F for 35-40 min. Serve HOT

I have never made a breakfast casserole nor have I tried one but that just looks delicious! I would love to be eating it for breakfast right now!

it really is simple… and can be adapted sooo easily I sometimes use breakfast sausage you know the Jimmy dean one and crumble it in instead of the Ham, or add some extra veggies… soo simple to do; yet soo yummy:-) would love to hear the outcome if you do try it …

We make something similar to this. We use bacon and long hash browns instead of the bread. I will try next time with the bread tho.
