Crockpot Thursday Apple Chicken Dinner

It’s Thursday and that means Crockpot Thursday… I know, I’ve missed the last few weeks and I’m so sorry, but was just too sick to worry about dinner…:0(….

However, I’m back and ready to share another yummy, Fall recipe with you guys. This Apple Chicken dinner was a hit in the Crazy Mom’s house and I couldn’t get enough of it.

Chicken, apples and pecans are classic ingredients in chicken salad. when combined together in a hot casserole, the flavors and textures blend beautifully and you will have an amazing super easy, quick dinner!

This is what you need:

  • 4 Boneless, skinless chicken breast
  • 1/2 teaspoon dried thyme
  • 1/8 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 onion, sliced
  • 1/2 cup Chicken Stock
  • 1/4 cup apple juice
  • 1/4 cup brown sugar
  • 2 tablespoons butter, melted
  • 2 Granny Smith Apples, sliced and peeled
  • 1/3 cups chopped pecans ( I didn’t have any, left it out)

This is how to make this dish:

  1. Sprinkle chicken with thyme, pepper and salt; place onions in bottom of 3-quart slow cooker. Top with chicken
  2. In small bowl, combine remaining ingredients, except apples and pecans, mix well. Pour into slow cooker
  3. Cover and cook on low for 5 hours; then stir in apples; cover and cook for 1-2 hours longer until chicken is thoroughly cooked and apples are tender. Sprinkle with pecans and serve over hot rice or pasta.

    looks super yummy I may try it on a weekend but I mainly need Crock pot recipes that allow you to put it in in the morning and cook all day as I work 9-10 hour days and I don’t get a chance to come home and add something.

    Just found this recipe when browsing your website, and I’m so glad I did! I sometimes make a side dish of apples and onions with thyme in a skillet, but now you’ve shown me how to toss it all in the slow cooker and do the meat and side dish together. Amazing–thank you!

    I like the way this loooks and sounds and I bet it would be terrific over ricee. To me it almost has a Chinese type dinner feel because of the sweetness. I use my crockpot a whole lot in the summer so might have to giive this a try..

    Wow–great recipe! I love the combination of apples, onions, and thyme, and often just cook them together in a skillet, but I love the idea of doing them in the slow cooker with chicken. Glad I was browsing your recipes today! Thanks.

    I love using my crockpot especially during the cold months. I have cooked with pork and apples but never chicken. This sounds like a recipe I am going to try.
