Put aluminum foil in a bowl, pour the grease in. When it hardens, roll up the foil and throw it out!

Easy cleanup, but I try not to toss too much aluminum. I usually just let the grease get solid in the pan and then use a spatula to scrape it in the garbage. The pan is dirty anyway, as is usually some utensil, so just use those and wash last.
I use a coffee tin that’s in the fridge. Of course, being from the south I remember my mother using said coffee tin of grease to cook (yuk!), but I don’t do that. When it’s full I throw it out. It’s gross, but it’s only gross once and awhile.
