What’s cooking this week in the kitchen ~Meal Plan

Did you have a good Mother’s day, too? My kids are the best…. I know every mom will tell you that her kids are the best and that’s just an awesome feeling. Love having my kids around and couldn’t imagine my life any different.  Aren’t these flowers gorgeous? I love the colors….I’m a happy camper.

We had a beautiful weekend in Central Florida and spend all weekend outside working on our back porch. Looking pretty good… I can’t wait to spend lots of time out there this summer, just me and the mosquitos… lol.

We are planning on finishing the dining area this week and then we will be able to eat dinner outside before the Florida Sun gets too hot and the humidity sets in with millions of flies and mosquitos… Can’t wait.

Keeping our beautiful weather in mind, that’s what I will be dishing up. Cool and easy dinners to make it simple on everyone. It’s time to welcome Summer… kids have 17 days more left of school… Let the countdown begin.

This is what we are dishing up …..

Monday:              German Rouladen with Spatzle and Sour Cream Cucumber Sauce

Tuesday:             Southwest Stuffed Bell Peppers

Wednesday:          Cuban Subs and Salad

Thursday:             Baked Salmon with Dill Potato Salad and Savory Irish Scones

Friday:                Breakfast for dinner ~ Pancakes and Fruit or savory

Saturday:            Oven roasted Sausage, Onion, Pepper & Potato Bake

Sunday:              BBQ time at our house ~Family over for dinner

    My husband was asking me yesterday what was on the meal plan this week. I want to use your idea for Baked Salmon with Dill Potato Salad and Savory Irish Scones! Sounds yummy!

    17 more days of school! I wish that was how many days of school were left here in New York City. It’s wonderful that you are able to have such wonderful weather to help you meal plan outdoors and complete your DIY projects.
