This weekend was kind of a tuff one; we had a lot of first and it’s kind of hard for me to see the kids grow up. My princess had her very first sleepover with her BFF and it was a blast. The girls had so much fun and we managed to stay up till about midnight and as soon as the sun came up I heard the girls whisper in my ear “It’s wakeup time.. the sun is up”…. so that was a ton of fun. I’m running on coffee and caffeine today and counting till I can lay on the couch to crash… but it was a good time and wouldn’t have missed it for the world.
We also dropped of the oldest Teen at Soccer camp down at the USF Campus and he will be attending and training with top league college trainers and maybe, just maybe we get lucky and get a scholarship out of this, but the experience will be priceless. He loves soccer and was a bit nervous as to what to expect and after we dropped him off we got oodles of TXT messages from him how cool it is and he has meet many players from Europe that are attending this Camp as well as players from all over the world. He is super excited and makes me sad a little, this is the first time I dropped him off over night for 3 days and he is completely on his own… WHAAA I guess we are calling it trial run for the college life next summer. I know it will be all worth it, just a Mommy thing, you know…..lol.
I also worked on my Menu Plan Center in the kitchen, check out what I have so far.. this isn’t done and I will post about it soon, but so far so good and I’m loving it, makes meal planning so easy and my husband and the kids get reminded over and over what’s for dinner that night.
So, this week in the dinner department will be all about Alex.. as many of you may remember he has severe food allergies and this week I told him he gets to pick every single dinner and he was super excited. That being said, just a reminder Alex is allergic to …. Pork, Chicken, Shellfish, Turkey, Onions, Cabbage, Melons, Lima Beans,Mustard, Almonds and a few other things, these are all LIFE threading, so we have to be very careful. He did pick the recipes, but of course we will have to adapt some to make them fit him…. but I know you guys will enjoy the “real” thing as well….

Monday: Slow Cooker BBQ Beef sandwiches
Tuesday: Baked Pasta with Ground Beef and Salad and Garlic Bread
Wednesday: Slow Cooker Beef Carnitas with Guacamole and Salsa
Thursday: Slow Cooker Beef Stew and French Bread
Friday: Beef Stroganoff with Pasta and Cucumber Salad
Saturday: Pizza on the grill night
Sunday: Mom’s night Off … dinner at Mimi’s house
Boy, we are cooking Beef all week… not sure how that will go over with everyone, luckily we stocked up on Beef a few weeks ago at our local Meat Market and since my Teen can only eat Beef, he is super excited and picked his favorite meals.

It has helped us tremendous knowing what’s for dinner… saved a lot of quick runs to the grocery store as well as no fast food runs… give it a try 🙂

You’re the best! You are so busy and your son picked an awesome menu. That has to be so difficult. He has a lot of allergies. Do they think at some point he could outgrow those of will that be with him forever?

Ohhh thanks Sandy, you made my day…. 🙂 According to his Dr. it’s highly unlikely that he will outgrow them since he developed them in his teens the dr thinks it will just get worse and even more allergies may appear 🙁 .. but we deal with it day by day one allergy at a time ….

We have an electric site on our camping trip this weekend, so the slow cooker is getting packed and I’ll give the beef stew recipe a try. Have tons of peas ready in the garden to throw in as well. Love throwing it together in the morning, playing all day and coming back to supper in the slow cooker already done. Follow it up with s’mores and call it a great day!
