Create a dinner with Pompeian #Review

We love to cook from scratch as much as we can and that also means creating our very own vinaigrette for the salad or roasting pumpkins and veggies. Since both my hubby and I are very health conscious and try to eat very little bad fats, we always look for Extra Virgin Olive Oil for our dinners and when I was asked to check out the new Pompeian Extra Virgin Olive Oil  “Robust Flavor”, I didn’t even think twice.

I have to admit, I’ve seen Pompeian many times at the store and many times I grabbed a cheaper Olive oil on the shelf; I never really thought that the quality would be that much of a difference and boy was I wrong.

We created a simple dinner the other night just to see how simple it would be to include the Pompeian Extra Virgin Olive oil into our dinner routine and to our surprise we loved the Pompeian Oil in every single dish; we marinated our pork chops in the oil along with a few spices and herbs; it turned out amazing; we also roasted a butternut squash with a little oil, salt and pepper; turned out fantastic and then we summed it up with a salad and used the Pompeian Extra Virgin Olive Oil in the vinaigrette and it was the perfect touch.

According to my husband “Dang.. this stuff is pretty darn good, babe”… Well, that says a lot; he is a salad freak and loves dressings and oils, but he hasn’t come across one that was like Pompeian and I kind of have to buy it from now on; he won’t allow anything else in the house.

Check out our delicious dinner, that was super fast, full of flavor and on a budget, thanks to Pompeian. I look at it spend a little more on the oil and get all the flavor and you won’t have to buy extra seasoning packs down the road.. YUP.. that’s about it. I’m in love.. can’t stop talking…LOL.

Cut your squash or veggie into bite size pieces; preheat your oven to about 400F; drizzle some Pompeian Extra Virgin Olive Oil over the veggies, add salt and pepper to taste and put in the oven till tender, about 15 minutes or so.

Marinade your Pork Chops with Pompeian Extra Virgin Olive Oil

Make a simple marinade for your Pork Chops; add some Pompeian Extra Virgin Olive Oil, fresh parsley, lime juice, garlic, Salt, Pepper and Italian Seasoning to a plastic baggie; mix well; add your meat and let marinate for 30 minutes to 24hrs; I usually use my Vacuum sealer to marinate, but didn’t have time and the 30 minutes already turned the meat out very tasty.

Mix Pompeian Extra Virgin Olive Oil, mustard, red wine vinegar, fresh parsley, salt, pepper to taste in a bowl; we never measure, just toss it all in a bowl, taste and either it is great or we add more “stuff”.. very simple, but always very flavorful and you know exactly what ingredients you have in your food.

There you have it.. a simple dinner from side dish,to meat and a salad all created with Pompeian Extra Virgin Olive oil, who would have thought that one oil would cover all these amazing flavors from fresh like in a salad or cooked like the meat.     I am a longtime fan of Pompeian and use it all the time. It is so important to have healthy oils in your daily diet, and this fits the bill perfectly.

    I love using Olive Oil! I always have a big bottle of it in my pantry. I have not tried Pompeian, but will have to buy some the next time I am in need. I love how you roasted the squash. We just got some from our CSA and I was not sure what to do with it. I will try this recipe!

    We love to cook from scratch in our household, as well, and we go through so much olive oil! We use it as a base for homemade sauces quite frequently, and of course it’s always great for sauteeing and pan-frying vegetables! Your recipes look great; I love pumpkin, so I’ll have to try that one out for sure. 😉

    We only use Olive oil and coconut oil in our home and I swear it makes everything taste better. By the way those pumpkin veggies look so mouth watering. Do you deliver 🙂

    I love roasted butternut squash…and it’s so abundant now with the fall! I always prefer to make my own vinaigrette to using bottled dressing. It’s so easy and it tastes so fresh and crisp.
