Dish up a Simple Sweet Potato Casserole this Holiday Season #CountryCrockCasserole

Thanksgiving is over, but Christmas is just around the corner and in our family we love to dish up a simple Sweet Potato Casserole as a side dish with all our meats. This year I gave my Sweet Potato a little kick and everyone loved it. I’m part of the Country Crock Casserole Club for bloggers and this being my last recipe in the Series, I wanted it to be a sweet one.

My last few assignment I created the Mexican Casserole and the Chicken & Veggie Mac n’ Cheese both were a big hit in our home. My challenge this month was to create a simple recipe; I wanted to make something different and not another Turkey dish, so I decided a side dish it was.

Country Crock can be used in all sorts of dishes so this time it showed up in my Sweet Potato casserole and it was the hit of the party. Sweet Potato’s are so easy to make and are soo healthy for you.

This is what you need:

  • 3 1/2 lbs. peeled and cooked sweet potatoes, heated
  • 2 Tbs. fresh orange juice
  • 2 Tbs. Country Crock unsalted spread
  • 1 tsp. orange zest
  • 1/4 tsp. chili powder
  • 1/4 tsp. cinnamon
  • 1/4 cup chopped pecans or walnuts
  • 3 egg whites
  • 1/8 tsp. salt
  • 1/4 cup granulated sugar
  • 1 jar (7 oz.) marshmallow cream

This is how to make it

  1. Mash your taters, add the orange juice, butter, orange zest, chili powder, cinnamon and nuts; mix and mash well
  2. Pre-heat oven at 375F and butter your baking dish with Country Crock spread; fill your baking dish with your Sweet Potato mixture; bake for 30 minutes.
  3. With mixer on high speed, beat egg whites and salt 1 min. Beat in sugar, 1 Tbs. at a time. Beat 3 min. or until fluffy. In batches, beat in cream; pipe onto potatoes. Bake 15min.
