Beef & Gnocchi Casserole Dinner Idea #Recipe

We spend last month in Germany with family and friends, we always loved their simple dinner ideas, they are always with fresh ingredients but affordable and will fill up any family. A friend of mine made this simple Beef & Gnocchi dish and once we returned back to Florida, I knew I had to try it and see if it really was that easy and if my family would enjoy it when I cooked it as well.

It was THAT simple, let me tell you. We had just arrived home from the 10 hr. flight after being gone 30 days and my fridge was bare. I quickly looked and I had everything but the fresh leek in the fridge. In 35 minutes I had dinner on the table, simple, delicious and something different this summer. It was a hit with my family, everyone asked for seconds and I even made enough to freeze.

Now wasn’t that simple? The smells are amazing in your kitchen and you could easily change out the leek and mushrooms and add vegetables that are currently in your garden, on sale or that your family loves like carrots, squash, zucchini and many more. So versatile but will fill you up in no time.

I like to serve this with fresh bread, baguette if possible and a fresh green side salad. Can’t beat that, looks gourmet, but won’t break your budget.

    I bet it does smell amazing! I love gnocchi. Hubby’s asked me to mix up his recipes next week w/something new, I think I’ll put this in there.

    This looks good! I would change out the mushrooms for carrots but I love leek, great addition.

      Hi Ellie Gnocchi are Potatoes, like small dumplings… come in different flavor, we prefer the original potato and you can get them anywhere like Walmart, Grocery store, they are usually in the pasta aisle… We love them, if you put them in boiling water takes 2-3 minutes and they are done… YUMMY .. you should give them a try.

        Thanks! I am definitely going to try Gnocchi. I’m looking for them on my next grocery run. My husband never wants to try different things, but he will if I tell him they’re potatoes. If I said Gnocchi he’d never try them. LOL I’ll wait until he says he likes it and then spring it on him.

    I don’t think I have ever tried Gnocchi but I have some that I bought about a month ago I need to use. I have been waiting for something to use it with and I might just have to try your recipe!

    I love Gnocchi recipes! My grandma use to make homemade Gnocchi, the best ever. I love how easy this is to make!

    My family enjoys gnocchi in a lot of things, but we especially love it with a pound of ground turkey or beef, Parmesan sauce, boiled gnocchi, and steamed broccoli thrown all together. Carrots taste good with it as well as a side salad with fresh fruit.
