As a busy mom of 3 I always struggle to dish up a quick dinner. Most days I don’t even get to come home from the office till after 6pm and then we still have sport events, homework or any other kind of activities to do that evening. Who can dish up a full fletched home cooked dinner with a busy schedule? Well let me share my little secret with you. Because this crazy mama loves to dish up homemade simple meals that are quick and delicious even on a busy night.
No more waiting till the weekend to have a Family Dinner, grab a chair and your favorite cup of Joe and check out how I dish up a quick dinner that is prepared from fresh ingredients in 30 minutes or less. You will thank me later and dish up many more recipe ideas for your family on a weeknight, trust me!
First step was I made a list of ingredients that my kids love to eat and then I started to create meals from there. My shopping list for our recent Walmart trip was the basic stuff you find in every home like pasta, fresh chicken, cheese, bacon and veggies.
While thinking of ideas that I could quickly create a skillet or casserole dish I glanced at the soup section and the new Campbell’s Soups for Easy Cooking caught my eye. It’s a tiny (well, not really tiny, it is still 14.5 oz. after all) fresh carton not a can!
I had to check it out, my Walmart had all 4 flavors, Savory Portobello Mushroom, Creamy Herb & Garlic with Chicken Stock, Sweet Onion flavor and Mexican Style Tomato. I’m the mushroom kind of gal and I knew I had to grab that one for my dinner. That’s how my Creamy Cheese Bacon and Chicken Casserole Recipe idea was born, yup, right there in the Soup aisle.

See, its super simple to create a fun dinner in no time. It took me about 30 minutes to make the dinner and that included cutting the fresh chicken and bacon and browning it. If you are in a big hurry, why not use a rotisserie chicken from Walmart’s deli to save you some time? You can also pre-cook your pasta a day or so ahead or even weeks if you put them in the freezer.
Using the Campbell’s Soups for Easy Cooking made a world of difference in my dish. Let me tell you, this isn’t your grandma’s cream of mushroom soup! I love that it no longer is in a can, the fresh carton is easy to use, easy to pour and to me the taste was much better, too. It was flavorful, fresh and just overall delicious.
Our dinner was a success. Everyone loved it, I was able to cook dinner, clean the dishes and the kitchen and be done in no time.
