It’s football season, it’s a busy season, lots of parties and events this month and in the month to come. Everywhere you go you have to bring a dish or create a quick meal for the family before you head out again. This year I decided to be the best I can and prepare as many of our meals from scratch, well as good as I can, or at least semi-scratch.
I made this Mexican Chicken Casserole for many years and it has been a hit no matter where I bring it and for the rare occasion that I don’t have to bring it to a Football party, soccer event or dance recital one recipe will make enough for an entire 2nd meal! Put it in the freezer and enjoy later. We just love it. It is simple, affordable, flavorful and delicious.

I picked up all my ingredients at Walmart the other day while buying things for my son who just moved into his new apartment. I know, I’m still crying over the fact that my son, my baby, moved out. While I tried to figure out all the things he may need like towels, pillows and trash cans I decided to make the Mexican Casserole for dinner and give him the 2nd one as a housewarming gift after a long day of moving. I knew he would love it.
His favorite ingredient is the Pace® Medium Salsa and since it is always at a best price at Walmart and a great value in the 24 oz. jar, I made sure to get him a few extra ones in his housewarming gift as well. Just incase he likes to have a few friends over and enjoy the game on Sunday or just play video games. My Mexican Casserole dish is super easy and only uses a few ingredients, you can swap them to something different for your family, it’s almost a casserole that has everything but the kitchen sink. Cook once and enjoy it twice and that’s my favorite part. Check out how easy it is to make and I know you will fall in love with the flavor combination, too.

I did say it was easy, right? This is a crowed pleaser and is great for leftovers as well, will be great the next day. I just can’t stop saying that, because it is that amazing! Pace® Salsa will keep the casserole moist and flavorful and you add the finishing touches with your choice of veggies and cheese, what else do you want beside everyone saying “This was amazing”?

Trust me, everyone raves about this simple dish that looks somewhat complicate would you agree? It will be our secret that you didn’t slave over a hot stove to create this delicious meal that tastes like you cooked it for hours. Just make sure to freeze the second set and if you run short on time or need to bring a dish, pop it in the oven and you are good to go. No flavors lots and lots of compliments to gain. You can use beef, chicken or no meat at all in the Casserole, the possibilities are really endless.

I would say a lot 🙂 … well one pan a 8×10 glass dish feeds my family of 5 with leftovers, we easily can make a small dish and freeze the other half for another meal. It’s perfect for a potluck, party or like I said if you cut it in half you have two meals; if you have only 2 in your family I would make the entire thing and then divide it into smaller meals would probably get you anywhere from 4-6 meals easy, more if you add fresh veggies after it’s baked and more cheese, sour cream etc. It is filling!! I know, this isn’t exactly what you wanted but I hope it helps, it’s hard to say how much cause I have a large family.

Leave the corn out if you can’t have it, never tried it with mushroom but why not, give it a try. It’s such a versatile dish, I’m sure it would be good, or don’t worry about it and just leave the corn out and add a little extra of the other ingredients … really, I hardly ever follow my own recipe…lol… enjoy

I actually use Medium Pace in my Pot roast! Caramelize onion, salt and add roast to a high heat browning well on both sides then add small pot of water and a medium sized jar of pace! Cover and bring to a boil reduce down to a 1 or Low setting and cook down 6 to 8 hours depending on size. DELICIOUS!!!!!!

It’s a regular box, whatever is on sale, I don’t think they come in large or small, just get a box of pasta 🙂 … Whatever pasta you like, it will work out
