It’s springtime and everyone is ready to head outside to get a few sun rays and leave the winter blues behind and in a few short weeks everyone will dress up in their Sunday’s best and celebrate Easter.
Hard to believe that I’m talking about Easter already, didn’t we just share some Christmas ideas a few days ago? Boy, someone must have blinked and time flies. While the kids played the other day I spend some time in the kitchen and created a few fun cupcakes for my daughter’s spring event and well, I had to test them on my kids first, poor kids always have to try my crazy ideas and I must admit most of the time they work really well.

A few weeks ago I mention that this super cool kitchen machine “Bellini” moved into our home and well since I have my machine I’m a little addicted to cooking and baking. I know, crazy. The best part, I can do it! As some of you know I have Lupus and some days moving around the house can be a chore, I make it to work every day and I make it home and if I’m lucky I make it to the store, but a lot of days I can’t move my hands and hubby cooks dinner. I’m such a lucky girl, he loves to cook.

BUT… Do you know since my all in one kitchen machine moved in I cooked dinner every single night! I baked, I made desserts and the kids actually said “Mom.. chill and stop cooking”. When was the last time your kids told you to stop cooking? yeah, I’ve been a little overboard I guess, hahahah.
This isn’t a sponsored post nor is it a sales pitch, nope I’m just so excited over my little kitchen helper that is helping me stir, mix, chop and cook all while I don’t have to use my hands at all. I still can dish up treats, dinners and anything I want. I’m SOOO excited I just had to share it.

Well during one of those moments “What can I cook in my Kitchen machine” I came up with these super fun cupcakes, oh my it took me ahhhmmm minutes and they were ready to go in the oven and I didn’t do a thing besides toss everything inside the mixer… AWESOME! Now, if you don’t have a Bellini, which I don’t know why you wouldn’t want on, it’s honestly my one and only thing that I use all the time in the kitchen (Besides my Pasta Maker.. OHH my!!) you can make these cupcakes the regular way of course, no problem at all.

The recipe below is for everyone to make these amazing cupcakes, check it out, aren’t they fun? Kids can help and will love receiving these come Easter Sunday, I just know it.

For those of you who are enjoying all the amazing benefits of the Bellini Kitchen Maker, the recipe above is very simple to use in the Bellini, I made the recipe below just for you. You can use any Muffin recipe if you like.

Here is how you assemble your Chocolate Bunnies

Using white candy eyes and “glue with some chocolate” onto the Reese cup

Use Sweet tart and “glue” on Reese cup with chocolate

Using edible pen draw whiskers, and a smile

place Reese cup and two malt balls into the frosting.

unwrap a tootsie roll and flatten using a rolling pin. Cut out bunny ears.

Place the cupcakes into the freezer for 5 minutes.

Pull cupcake out. Bend one part of the bunny ears and dip into the melted chocolate. Place the ears on top of the Reese cups.

Wasn’t this fun? Super easy and takes no time at all if you use your Bellini Kitchen machine, which is such a lifesaver for me and my hands or anyone who has arthritis, or issues with moving their hands. Trust me, it’s an amazing feeling to know you can cook again for your family and spoil them even if you are battling health issues like myself with Lupus, a little help goes along way.
