It’s BBQ time and we love to get together with family and friends as often as we can. Grilling a few steaks or some chicken is usually on the agenda and if we are invited to a party we always bring a side dish. Fresh From Florida has been a great inspiration for me the last few weeks and this is how my Watermelon Salsa was created.
I got a call the other day from a dear friend who wanted us to come over for the afternoon, I hate going empty handed so I quickly looked around my kitchen and I always have some Fresh From Florida produce around the house, especially in the summertime a quick salad is a much better dinner idea then a big heavy meal that would heat up the kitchen.

I grabbed the watermelon that we had in the fridge, all cut up and ready to be eaten, unfortunately we had eaten that giant watermelon for days and I just wanted to do something different. I saw the corn, looking mighty fine and the tomatoes smiled all pretty at me, too. Why not make a salsa? Yup I had all the ingredients in the house and I bet it would be an awesome flavor combination. Within minutes I cut, tossed and mixed the salsa and I was ready to walk out the door in like 15 minutes, salsa in hand. It was that simple.

Isn’t the color combination beautiful? I’m in ah with the flavors, too. Who would have thought that Watermelon and Tomatoes along with the corn would make an awesome salsa, I picked up some chips for dipping at the convenience store and off to my friends house we went.

I got a lot of compliments on the salsa, it was colorful, fresh, crunchy and delicious. I can’t believe I have never made this before. This will certainly be a stable on my take along list or anytime I need a side dish this summer. You can easily mix up the ingredients with different produce that is in season. I love to buy what’s in season to ensure I always get the best quality possible so I can already see myself trying to use the salsa recipe and maybe substituting the corn for when cucumbers are in season or changing the watermelon to strawberries. It’s such a simple concept but will have many different flavor combinations. I’m in love and you should be, too.

As most of you know I made Florida my home and I’m still in aww 20 years later how amazing Florida is, the beautiful beaches, the amazing fruits and vegetables that I can get in my very own backyard. I love that Fresh From Florida and the Florida Department of Agriculture promote locally grown Florida produce and fresh seafood and bringing awareness that our wonderful state has amazing flavors to offer, too.

Back in the day when I thought of Florida all I could think was oranges, nope we have lots more to offer, this month we have Blueberries, Tomato, Sweet Corn and Watermelon in season, just to name a few. All are locally grown and sold in Florida stores, they are at season’s best, grab a few the next time you are out and make your very own Salsa creation.
