LunchBox Tuesday – Easy Smoothie

January 18, 2011 By Melanie Roberts 3 Comments

My kids won’t eat anything healthy, so it can be a challenge sometimes to get them the “good” stuff.. but they LOVE smoothies… I try to make them some for breakfast if we have time. Here is a simple yet delicious recipe, that”m sure you and your munchkin will enjoy…

You need:

  • 1 ripe banana
  • 2/3 cup of frozen  berries
  • 3/4 cup of cold orange juice
  • 2 teaspoon lemon juice
  • 1 teaspoon honey or syrup if the berries are to sour

How to make it :

Mix Banana, berries and Orange Juice in blender till you get the consistence that you like.  taste and add lemon juice and honey/ syrup if desired.

Tip:

If you are sending this to lunch with your little one fill up a plastic water bottle, put it in the freezer after your smoothie is done for 1-2 hours ( may be ok over night I’ve never done that though) and then pack for lunch… it will be thawed out by the time little one has lunch and meanwhile will keep all the other lunch items nice and cool….

Hahaha- what a great idea! Last night we actually made smoothies and took pictures so that I could write a blog post! 😉 Toooo funny! I didn’t think of orange juice though- good idea! We used blueberries, strawberries, bananas, and the kids rice yogurt as well as some flaxseed for extra protein.
