This week Hubby made the plan and his choice for Crock pot Thursday was “Carnitas”.
They actually turned out great. I really enjoyed them and I know the boys and hubby just ate them all up…
Here is what you need:
1 1/2 pound of pork roast
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon cumin
1 onion chopped
3 cloves garlic, chopped
1/2 cup Chicken Stock
How to make this:
- Add everything to your crock pot, cover and let cook for 8-9 hrs on low, till meat is very tender.
- preheat oven to 400F; remove pork from crock pot and place in large baking pan, using 2 forks, shred the meat. Take 1 cup of pan juice from the crock pot and mix into the pork.
- Bake at 400F for 15-20 minutes or until pork is crisp on top. Stir pork mixture thoroughly and bake for 15-20 min longer or until pork is again crisp on top. Serve with flour or corn tortillas and lots of salsa, cheese, guacamole and anything else you may like to add….
This was sooo yummyyy….. this is a keeper…

Sara.. let me know how it turns out… we really liked it… something different for sure 🙂 and you could actually serve this a lot of different ways, use the meat in salads, on wraps, or even BBQ Sandwiches… all would be good..
