Crock Pot Thursday : Chicken in a Hurry

February 17, 2011 By Melanie Roberts 9 Comments

Just like the name said it… we needed supper in a hurry and we made “Chicken in a Hurry”. This was actually really good… It had a BBQ kind of like taste and onion taste… I really enjoyed it and so did hubby and the boys. Simple, super easy to toss together in the morning before you head out of the house and when you walk back into the kitchen.. this is what you will find:

This is what you need:

2-3 lbs. skinless chicken drumsticks, we used a few chicken breasts, was just as good
½ cup ketchup
¼ cup water ( I actually increased this to ½ cup and could have easily made it a cup to have extra gravy)
¼ cup brown sugar
1 envelope dry onion soup mix

This is how to make it:
Toss everything into the crock pot, mix well.. place chicken in crock pot, close the lid and walk away; cook on low for 6-7 hours and on high for 3-4 hours. Serve with rice, pasta and veggies… Soo yummy……

The finished dinner:

This looks so good and easy and I’d love to try it. Do you defrost the chicken, or did you put it in frozen? Thanks for sharing the recipe!

Oh yumm – maybe we’ll have this for dinner tonight.

Something else I do to make life easier is to do everything the night before. I take out frozen chicken, throw everything in the crockpot, and then the next morning, when I’m making lunches for the kids, I take the crock out of the fridge, plug it in, and off we all go. Then I come home to the aroma of “somebody else” cooking dinner for me. It’s really wonderful – or else I’m just pathetically in need of some help around here 🙂
