Create a simple leftover Sweet Potato Casserole Coffee Cake #Recipe

My favorite thing about the holidays are the leftovers; we all love to use turkey leftovers and create casseroles or sandwiches; the veggies get used for days with dinner, but what do you do with any Leftover Sweet Potato casserole? I have to admit, Sweet Potato Casserole is my favorite dish at Thanksgiving and for some reason that’s the only time of the year I make it.

Must be a traditional thing, who knows; another odd thing no one else will eat the Sweet potato Casserole besides me and we all know that making a small single portion is really not working out. This year I decided to put my Sweet Potato Casserole leftovers to good use and to my surprise, the entire family loved my “Leftover Sweet Potato Casserole Coffee Cake”

This Coffee Cake was soo simple to make and if you don’t have any sweet potato casserole leftovers; just quickly mash up some Sweet potatoes and that will work as well.

This is what you will need for the Coffee Cake

  • 1 1/2 cup(s) All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Ground Cinnamon
  • 1/4 teaspoon(s) Baking Soda
  • 1/8 teaspoon(s) Salt
  • 1 stick(s) Unsalted Butter, at room temperature
  • 3/4 cup Granulated Sugar
  • 1/4 cup Light-Brown Sugar
  • 1/2 teaspoon Butter Rum flavoring (optional, you could use Vanilla Extract)
  • 1 cup Leftover Mashed Sweet Potato Casserole
  • 2 large Eggs, at room temperature
  • 1/2 cup Chopped Pecans

P.s I found the Butter Rum on Amazon.com or at Walmart and it was the perfect flavor for this coffee cake; it was such a strong and sooth flavor, perfect for Holiday cooking, so be on the lookout for the Candy & baking flavors; they are fairly cheap as well and much better then the extracts.

This is how to make the Leftover Sweet potato Casserole Coffee Cake

  1. Preheat oven to 325 degrees F. In a medium bowl, sift flour, baking powder, cinnamon, baking soda, and salt.
  2. In a large bowl and using an electric mixer on medium, cream butter, sugars, and vanilla until light and fluffy. Blend in sweet potatoes; then eggs, one at time. With mixer on low, add flour mixture in thirds; blend just enough to combine.
  3. Spoon batter into a greased 9-inch loaf pan. Sprinkle pecans atop batter. Bake until cake tests clean when a skewer is inserted into center, 65 to 75 minutes (for a 9 inch loaf pan) or 30-35 min for the Sweet Creations Mini Loaf Pan.

This was soo simple and used all up my leftovers and now we can enjoy our Sweet Creation with a nice hot cup of Coffee or Coco and remember the flavors of Thanksgiving. The Mini Loaf pan was perfect for my coffee cakes; I can eat one and give away the others to family and friends to enjoy.

Trust me, there is plenty of coffee cake to go around; the pan is amazing and your dishes will come out beautifully no matter if you use the Loaf Pan to make individual Mac N’ Cheese, Mini meatloaf’s or any kind of cakes and desserts; non stick makes it perfect to keep your dishes looking beautiful and once you are done; toss it in the dishwasher and call it a day.

    Just wanted to let you know that I made this yesterday with our leftover potato casserole and it was simply amazing!

    The whole family loved it, even the two who say they don’t like sweet potatoes.

    Absolutely love it! Adapted it slightly…I had made a sweet maple bourbon sweet potato cranberry pecan casserole (All chopped) so I used a little less sugar and should have used a little more moisture but otherwise a huge hit!
