School is out for the summer and everyone gets to relax a bit, but before we know it… the Game Day’s will be back, wheatear it be Baseball, Soccer or Football we all have our favorite sport but we all love to hang out and cook for our families and friends on Game Day. Gooseberry patch, one of my all time favorite cook book company heard it’s readers loud and clear and created an amazing 240 recipe Game Day Fan Fare cookbook.
The best part about Gooseberry patch that all the recipes are tested and created by Mom’s like you and me. Making one of the dinner ideas or desserts will please your family as much as the family that submitted the recipe loves it. It’s simple ideas that everyone can cook but create a fun, delicious and amazing dinner to bring the family together.
This Game Day Fan Fare book isn’t anything different, and between you and me… shhh.. don’t tell anyone else though… you don’t have to wait to Game Day to create one of these amazing brunch, Munchies, Salad & Sandwich, Side dishes, Main dishes and many more recipes, you can create them any day you family is wanted a home cooked meal that won’t break the bank and still fit into your busy time schedule.
I just love the Gooseberry Patch books and this one is no different with 240 amazing recipes, tried by Mom’s and Dad’s like you and me sure will keep your family happy and asking for seconds. We decided on a Enchilada Lasagna; I love Enchilada and I love Lasagna, but never thought of putting the two together and it was amazing; super simple, quick and delicious.
Another nice thing, a lot of the recipes are adaptable, whether you have to deal with food allergies, like we left out the onions in this recipe or if you have a different kind of cheese at the time you are making dinner; in my case… we only had gouda … but it all worked out and was amazing….
Enchilada Lasagna
This is what you need:
Like I said, you can substitute products, like we had no red enchilada sauce and I used the Enchilada Sauce mix instead and for the Cheddar cheese we substituted Gouda slices that we had in the house at the time. So no worries, this dinner can be thrown together in no time with what you have on hand.

Now doesn’t this look delicious? It didn’t just look delicious it was delicious… and like I said we substituted a little instead of the shredded cheese on top we laid some of our Gouda Slices…. YUMMM.. it was soo good and soo simple.
