It’s the middle of summer her in central Florida, and I’m sure across the country it’s HOT, too I’m home with the kids on vacation the next few days and sure don’t like to spend all my time in the kitchen.
My Tween offered to help me with the Crockpot dinner and he did a wonderful job; while we had fun the Crockpot cooked our dinner and it smelled yummy all day.
Get your kids involved and let them help, it’s something they can do and will love doing, especially knowing they help the family out… my Tween was super excited to announce that he cooked dinner all by himself.
The Teen gathered all the ingredients and this is what you will need:
- 1 1/2 cups chopped onions
- 1 medium green bell pepper, chopped
- 1 pound chicken, boneless is perfect, but all we had was drumsticks
- 1 cup Salsa
- 2 teaspoons grated ginger
- 1/2 teaspoon garlic powder
- 1/2 teaspoon red pepper flakes
- Salt, pepper and any other seasoning to taste
This is how to make this:
Place all ingredients into the crockpot, close lid and cook on high for 5-6hrs. and on low for 2-3 hrs or till chicken is done. Add some rice and maybe a Salad and dinner is served.
This was Yummy… super quick and the Teen was happy with the end result; it smelled super yummy and can be adapted with more or less veggies if you like.

I have a son who is 16. He also loves to cook, in fact he says he wants to go to culinary school. Using the crock pot does seem to make cooking seem like less of a hassle and the meals usually taste so good. The picture of the dinner your son cooked looks delicious. It’s great that you took the time to encourage him to cook.

Oh this looks wonderful! I’m always on the lookout for new crockpot recipes and the whole family likes chicken so I know this would be a winner with us. It’s great when my daughter helps with the cooking, too. 🙂

I live in Florida, too (NW Florida) and I agree — it’s too darn hot to cook! It’s time to break out the crockpot – and guess what I’m making first?? This sounds delicious!! And I LOVE that it is SO uncomplicated!
