Summer is over and I’m kind of glad to have cooler and less humid days ahead of us; the one thing I’m not happy about is to let go of the Popsicles just yet. I know you could eat them all year long, but Summer is just the time when the Popsicles taste just right. Well; all that came to a screeching hold the other day and I was proven different.
My kids had asked for a treat and wanted to know if I could make some cupcakes, I had time and decided “Why not”. I told the kids I would make Pumpkin Cupcakes and quickly I heard that whining and complaining “Why can’t we ever get something with chocolate”… “Mom only looks for the good stuff and never gets us any treats”. Well, I quickly checked to see if I had any kind of chocolate in the house so I could surprise the kids. I know, I’m a sucker, I spoil them way too much, they probably will never move out!
I searched high and low and not one single chocolate in the house, gee… somehow I ended up in the freezer and found a box of Fudgsicles; Hey… they are chocolate! So I decided to give it a try. Check out below how my Pumpkin & Fudgsicle Cake Pops and Cupcakes turned out… Ever used Fudgsicle’s to bake? Would love to hear your story.
This is what you need to make your Cake Pops or Cupcakes
Yup.. only 3 (!!) Ingredients:
- 1 15oz can of pumpkin puree
- 1 box of cake mix (I had Pumpkin in the house, so why not)
- 3 melted Fudgsicle
This is how to make the Cake Pop and Cupcakes

Melt your Fudgsicle in the microwave or leave them on the counter while you mix the cake batter

Mix Pumpkin puree and cake mix in a bowl; by hand or with a mixer

add 1/2 of the Fudgsicle to your cake batter and mix well
-
Pre-heat oven to 350F and fill your cupcakes or cake pop pan

bake for 15-20 minutes or till a toothpick comes out clean

let cool
For the Toppings:
-
Use Melted Chocolate, I had only white one, with a small amount of the melted Fudgsicle for the Cake Pops

I also mixed the last portion of the Fudgsicle with Whip Cream for the Cupcakes
That’s it.. dip your Cake Pops into the chocolate mixture; mine didn’t melt well, it turned into a fondant paste but worked well to mold around the Cake pops, but tasted great. I rolled my Cake Pops in some Halloween Sprinkles ~ Voila Pumpkin & Fudgsicle Cake Pops.
Since I had a lot of cake batter left over, I decided to make some Cupcakes and I followed the instructions just like above; once they were done and cooled I whipped up some Whip Cream (You could use any frosting that you like), mixed that with the remaining Fudgsicle and toped my Cupcakes ~Voila Pumpkin & Fudgsicle Cupcakes
The kids loved the chocolate taste in the Pumpkin Cupcakes and Cake Pops and their chocolate craving was satisfied and I still snug the healthy stuff a/k/a Pumpkin in it. What more can I ask for. So even though summer is gone, our Fudgsicles are still a big hit no matter what stage, frozen or part of our treats.

That looks like fun for the kids and adults! My favorite Popsicle treat is a Root Beer Popsicle. I just love them in the summer. I think it brings back memories from my childhood. They must not be very popular because they are hard to find.
