Sorry for posting so late… I put my Toddler to bed last night and for some reason I fell asleep with her ….I sure enjoyed my loongg nap 🙂
Here is what’s on the Menu for Wednesday:
Meal in One
This is what you need:
2 lbs ground beef
1 onion diced
1 green bell pepper, diced
1 tsp salt
1/4 tsp. pepper
1 large bag frozen hash brown potatoes, divided
16 oz container sour cream, divided
24 oz container cottage cheese, divided
1 cup Monterrey Jack Cheese, shredded ( we used Cheddar )- Brown ground beef, onion and green pepper, drain off drippings
- Season meet mixture with salt and pepper
- In slow cooker layer 1/3 of potatoes, 1/3 third of meat mixture, 1/3 sour cream and 1/3 cottage cheese.
- repeat layers twice
- Cover and cook on low for 4 hrs., sprinkle cheese over top during the last hr.
This recipe came from the Fix-it and Forget-it Christmas Cookbook: 600 Slow Cooker Holiday Recipes Book; and will serve 6-8 servings and will take about 25 min to prepare.
How did we like it ?
I would make it again but would make some changes, for one I would not use the cottage cheese, it just didn’t fit. I don’t know what the purpose of the cottage cheese was, it was very overpowering any of the other flavors. Other than that we liked it. we love potatoes in our house and I have never thought about using hash Browns in the crock pot, so that was neat.
I would also add more cheese in between the layers to give it a little more creaminess.
As you can see, Crockpot recipes can always be adapted to your needs, wants and likes. That’s the beauty of them, start with a base recipe and build from there….
