We are officially back to school, for everyone! This will take some time to adjust for all of us, 3 kids in school and two have a bus pickup at 6;30 AM. Yup… I see a 9PM bedtime for all of us in the near future .
This week we will keep our Menu plain and as simple as we can. We still have a lot of things to get used to in the afternoon so dinner is the last thing I want to worry about.
Last week we had Chicken Meatball Subs and they turned out amazing; did you check them out yet? I had an extra roll of Tyson Ground Chicken in the fridge so I found a great recipe that we will try this week and I can’t wait to see how it turns out. Kind of liking the ground chicken and may make that more often for dinner (except the Teen of course, he’s allergic to chicken, he will get beef).

Monday: Chicken Leek & Couscous stuffed Peppers with salad
Tuesday: Nutty Pear and Blue Cheese Pasta Salad with Pork Chops
Wednesday: Shrimp Tacos with fresh Salsa and fresh guacamole
Thursday: Emeril’s Rigatoni with Broccoli and sausage
Friday: Greek Ground Chicken Burgers and German Potato Salad
Saturday: Crockpot BBQ Beef sandwiches with Salad
Sunday: Mom’s night off ~ Dinner at Mimi’s house
And since we are all heading back to school and need to make lunches; I decided to post a few Lunch ideas to get you going, too. I know making lunches at home is a lot cheaper then buying school lunch and a lot healthier, too.

Now you know we are dishing up this week. I told you it will be simple and sweet yet delicious and healthy. Should be a good week for us to adjust back to a school routine. What are you dishing up? Wonderful meal plans! I make them for two weeks at a time, had to make some back to school ones this week too, they will be quick and fun until we get the routine down again for the busy school days!

We’re adapting to 9pm bedtime as well this week in prep for school starting next week. We pack lunch every day so would love to add to lunch box ideas as well as quick dinner ideas. Love getting ideas from your post!
