Book Review Wednesday: Taste of Home Comfort Food and recipe “crustless spinach quiche”

Taste of Home Comfort Food Diet Cookbook: New Family Classic s Collection: Lose Weight with 416 More Great Recipes!

It’s no secret, we love cookbooks and especially books that have easy yet tasty recipes. A few weeks ago I was in search for some dinner ideas when I came across the Taste of Home book that my Mother in law had. She was all excited about her new book and showed it to me. At first I wasn’t too excited, since the book said “Diet” on it, but once I took a closer look, I loved it. I even went home and ordered 3 taste of Home books for myself.

Have you seen the books yet? If not it’s about time you check them out. I loved the setup. I’m in no way in need of a diet, so for me the calorie count and all the other stuff wasn’t of interest, But if you ae on a diet or trying to watch what you eat, this Taste of Home book is wonderful to keep you on track; each recipe has it’s own calorie count right on the recipe, each recipe also comes with a picture and full list of ingredients and how to make it as well as Nutrition facts; I love it.

This book has from snacks to dinner and even dessert and everything in-between, waiting for you to discover; there are 300 pages jam packed with mouthwatering recipes and tips to help bring balance and variety to your diet as well as an entire section on how to Lighten up your family favorites” or even a 6 week meal plan, that is from breakfast to lunch and dinner prepared for you; all you have to do is grab the book write your grocery list and start cooking …. LOVE it… another cool thing is that if you purchase the book it comes with a complimentary 1 years subscription to Taste of Home a $23.94 value.

I cannot rave enough about the  Taste of Home Comfort Food Diet Cookbook: New Family Classic s Collection: Lose Weight with 416 More Great Recipes, and will defiantly try to purchase as many as I can, they are by far my favorite cookbooks now.

Here is a sample recipe of what we cooked the other night for dinner; I wanted something quick, yet meatless and something that used all the ingredients that we had in the fridge. We came up with the Crustless Spinach Quiche

 

This is what you will need:

  • 1 cup Milk
  • 1 cup Egg substitute ( we used regular eggs, since I’m not on a diet and we had lots in the fridge that needed to be used)
  • ¼ teaspoon pepper
  • 3 cups shredded cheddar cheese
  • 3 cups frozen chopped spinach, thawed and squeezed dry
  • 1 small onion, finely chopped
  • 5 Portabella Mushrooms ( we used a pack, I love Mushrooms)

This is how to make it:

  1. In a small bowl, beat eggs and mix with the milk and pepper; beat until smooth; stir in the remaining ingredients
  2. Spray your 10 inch dish with cooking spray and we used bread crumbs to dust the pan ( not needed, but I like to do that)
  3. Pour your quiche into the 10 inch dish
  4. Bake at 350F for 45-50 minutes or until a knife inserted near the center comes out clean.

This is what it will look like… it was so simple, yet yummy and actually a cheap dinner…. You can serve with a salad, would be good for Breakfast, brunch, lunch or dinner J

I highly recommend anyone who is looking for a new Cookbook, to check out this Taste of Home Comfort Food Diet Cookbook, it has wonderful ideas and I cannot wait to try them all.     That looks so so good! I have been wanting to try my hand a a quiche so I may have to try this one! My friend just made one for my blog, so i feel like I’m seeing them everywhere and they look so yummy!

      Shasta.. it was soo easy ( well hubby made it.. so for me it was “easy”..lol), but honestly it was super quick he didn’t spend much time at all making it.. and it was yummmmmmyyy
