This is such a yummy dinner and soo easy to make. I found this in a cookbook a long time ago and don’t remember where ( if you know who has this let me know and I will give credit)
You Need:
1 pack of Chicken ($1.99/lb)
1 can Corn ( or frozen corn) ($.50)
2 Cans of Black beans ( or one pack dry beans) ($.50 each)
2-4 cups of Chicken Stock ( depending how liquidy you like it) (on hand)
1 Jar Salsa ($1.0)
Mushrooms ( won’t miss them if they aren’t there)
Extras: Sour Cream, Avocado, Cheese
About $5-$6 for this meal and it gave us plenty to eat and I have leftovers for tomorrow, you can stretch it with more chicken stock, I only used 2 cups, and then shred your chicken, will go a loooong way
HOW TO:
Add everything to the crock pot, close the lid and let cook for 8-10 hrs, if you use canned beans you probly can get away with 6hrs on high. I do have to say I made dried beans last time and it had a totally different taste and was a lot better then the canned beans. Now the canned beans today were still great, it just had a totally different taste…
If you are going to use Dry Beans soak them the night before, then rinse and add to your crockpot, if you don’t have the night before, take a pot of boiling water add to the beans, cover and let sit for 2-3 hrs, then drain water rinse and add to crockpot.
