Have you ever had bavarian German Potato Salad? It is soo different from the American Salad. i don’t use any Mayo or heavy creams, it’s soo yummy. My Favorite is when the salad is still warm… ohh soo yummy.
This is what you will need:
- 2 pounds small yellow-fleshed potatoes (about 2 inches in diameter), washed well
- ¼ pound double smoked bacon, diced
- 1 medium onion, chopped
- 2 German pickles diced
- 2 tablespoons Dijon mustard
- ½ teaspoon sugar
- 2 tablespoon mild vinegar
- ½ cup beef broth
- 1 ½ tablespoon chopped fresh parsley leaves plus extra for garnish
This is how to make it:
- In a large saucepan combine potatoes with salted water to cover by 1 inch and simmer until just tender, about 20 minutes.
- While potatoes are cooking, in a medium heavy skillet saute bacon over moderate heat, stirring, until browned and crisp and transfer with a slotted spoon to paper towels to drain.
- Add the chopped onions to the bacon drippings in the skillet saute over moderately high heat, stirring, until translucent (about 3 minutes).
- To the skillet add sugar, vinegar, pickles, mustard, broth and simmer 2 minutes ( leave out 1 Tablespoon vinegar for later).
- Add onion mixture to warm potatoes with parsley and remaining 1-tablespoon vinegar, tossing gently, and season with salt and pepper.
- Drain potatoes and let stand until cool enough to handle. Peel and slice potatoes.
- Add the still-warm potatoes to the liquid in the skillet along with the reserved bacon and the chopped parsley. Toss gently. Season with salt and pepper.
- Serve potato salad warm or at room temperature, garnished with parsley.
Yumm.. I can already smell, just by typing up the recipe. This is my all time favorite. I grew up in South Bavaria in a town called Kitzingen, this is exactly how we make ours, but Germany has so many different traditions all over the country, if you are familiar with Germany, this may not be the same recipe as you are used to, but it sure is the one my mom and grandma used t make and I make it for my family and the LOVE it… different and yummy.

We eat a warm potato salad with bacon also, just made differently. I warm up leftovers in the microwave. 🙂

We enjoy spending a lot of time at the lake during the summer and theis would be so perfect for a picnic.
I will definitely be trying this recipe. I love the variation. And have always preferred eating my potato salad warm.
Fortunately my husband does too.

Great idea! My daughter eats meals in between jobs, and there isn’t a microwave in either place, so I’ve been struggling to find reasonable things for her to eat. I bet she’d love this!

My parents use to make a German potato sald but it had bacon pieces in it and I never got the recipe. Now, I at least have a recipe to try for it. Thanks. I am needing more ink from printing out your recipes…:-)
