Another weekend has gone by; for some reason they just fly lately. Here we are at the end of March, Easter just around the corner; hard to believe. Last week our challenge was to come up with a game plan on how to feed my Teen#2, with all his allergies. I think we mastered pretty well. This weekend I freezer cooked about 12 different meals just for him. Super excited that we don’t have to cook beef every single night.
I also decided to remodel my office, total last minute decision and now my PC will be sitting on a window seat for at least a week or two till I get it all back in order; I know.. what was I thinking? But, it will be worth it. I’m sure. In case I miss a few days of posting, now you know why.
We made these Po_Boy Chicken Sandwiches the other night and they were SOOO good; I will post the recipe this week, so stay tuned.

Sunday: Easter Dinner at Mimi’s House *Happy Easter Everyone*
Another exciting week, can’t wait to try some new recipes that I had on Pinterest for a while and some old favorites. Of course, Easter Weekend is also next weekend; hope everyone will have a great time looking for Easter eggs and spend lots of precious time with the family.

I have to comment on here again. I want to make the Italian Layer Bake but have to get the turkey and peppers. Also, I have munster cheese…what do you think? Think it would work or would I have to get swiss? Gosh it looks incredible

I totally think Munster would work… I always change cheeses to what I have in the house; I prefer Gouda :-)….
