It was a beautiful weekend in Central Florida. How about your neck of the woods? I was sick all of last week, down with a nasty sinusitis and it took me all week to get over it. Needless to say much of our dinners weren’t what I had planned, but we made it through the week. The sunshine this weekend sure helped me to recoup and get back on track with our meal Plan.

This is what we are cooking up this week… would love to hear what your plan is.

Monday:              Garlic Spaghetti Bread Bowls *the kids love to help with these*

Tuesday:      Parmesan-Asiago Pasta Salad with veggies & Olives; Garlic Bread

Wednesday:  Shrimp Tacos, Fresh Salsa and Fresh Guacamole

Thursday:    Sausage, Bell pepper and Potato bake

Friday:        Pot Roast in the Crockpot with Loaded Mashed Potatoes

Saturday:    Ham & Cheese Panini with Salad on the side

Sunday:                 Mom’s night off, dinner at Mimi’s House !!!! Smile 

And… that’s what we are cooking….. sure will be a yummy week. It’s always a pain to make this plan, but in the end I’m always happy to have a list of things to cook each week. Do you feel the same??

Looks like you have a super yummy line-up on your menu this week. Shrimp tacos sound so good! Think I’ll be adding those to our menu this week, too. Thanks for the ideas!!

Enjoy your week, Melanie! I never thought to put spaghetti in bread bowls…great idea! I hope you like the pasta salad. It’s totally inspired by my years in Germany. They know how to do pasta salad over there! ;-)

It was a mix of sun and rain in the Pacific Northwest this week, but the Mister and I ate breakfast out on the “veranda” (not really, just a patio) this morning for the first time since October or maybe early November. I love sitting out there in my fuzzy bathrobe with my tea and scramble.

I’ve found that meal planning is a pain and a joy in turns. Some weeks it’s alright, some weeks it’s a chore, every week it’s a blessing I’m grateful I took the time to do when it comes to later in the week.
