Happy Monday! We are heading out to spend a few days at the Hyatt Regency Grand Cypress in Orlando, Florida. We are super excited. Vacation is finally here. We spend a few days there a couple of years ago and had a blast.

This week I will try to make more Casseroles, it was a lot of fun making the Chicken & veggie Mac n’ Cheese and so simple that I think for vacation time this would be perfect. we are expecting a lot of rain for the rest of the week, so no BBQ’ing going on much and that would be simple. I set off to find some fun Casseroles that my family would enjoy, check it out.

Saturday: Tater Tots Casserole with Salad
Sunday: Cheeseburger Casserole with Tomato Salad

Enjoy your vacation! My hubsband took an early vacation this year and is taking his 2nd week in December so no summer plans for us. Your menu for the week sounds yummy! It’s going to be a busy week here as well. I’m doing “easy” all week and looking forward to the the 4th of July so I can have a break.
