What’s cooking in your kitchen #MealPlan

April 22, 2013 By Melanie Roberts 22 Comments

Another week went by and hard to believe we are approaching May. Full Steam ahead and before we know it, the kids will be out of school for the summer. I think we have like 6 weeks left. Hard to believe where is this year going?

Last week was a busy week for all of us, between all the things in the media, lots of prayers went out to Texas and Boston, I’m sure our family hung a little closer as well. I made sure I hugged my kids a little longer and a bit more often and told them how much I loved them. Things have been crazy not only in the news, but also at home. The kids had FCAT testing all last week, which always takes a toll on the kids as well as us parents.

Let’s hope this week will be a bit quiet and peaceful. My Teen is a runner himself, so this hit home to all of us. But we aren’t giving up, we are strapping on our running shoes and have each and every day last week and we will let nobody push us down, keep on running ….

Hope your week will be a great week as well. Check out below what our plans are for dinner this week. With the HOT Florida sun around us, I wanted to keep dinner quick and easy, yet delicious. Enjoy… what are you dishing up?

Pizza Garlic Bread Bowls

Monday:         Easy Beef Enchiladas with Salsa and Guacamole

Tuesday:         German Pork Schnitzel and Asiago Pasta Salad

Wednesday:     Crockpot Potato Soup with Beef Franks

Thursday:       Spaghetti in Bread Bowls with Salad

Friday:           Hamburgers with Scalloped Potatoes and Baked Zucchini Fries

Saturday:        We are invited to a wedding ~ No cooking for us today

Sunday:          Big Birthday Bash for Granny ~ No cooking for us today

pasta-salad

Well.. this is our short week, but simple and delicious dinner ideas. What’s cooking in your kitchen? Would love to hear your plan.

As every week, we are linked up with I’m an Organizing Junkie so be sure to check out the many wonderful meal plans that are posted there.

I actually thought the spaghetti in bread bowls were pizza bagels but you forgot to cut the bagels open. My family loves pizza bagels. I never heard of spaghetti in bread bowls.
    Great idea.

The spaghetti in the bread bowl is a creative idea! I’ve never encountered it before but it looks just as great as soup in a bread bowl! Thanks for the inspiration! The Asiago pasta salad and the crock pot potato soup look wonderful as well! I’ll have to check those out! Lots of meal ideas. Thanks for the links! It’s true, time is flying by! Can’t believe it’s already mid-April!

We just bought 10 pounds of potatoes (it was buy-one-get-one-free, what else could I do?), and there’s only two of us in the house! I was thinking I should make a potato soup, and your Crock Pot Potato Soup is the answer. Great timing–thanks!

I’ve been seeing that many of my blogging friends make weekly meal plans. Being a working mom, I didn’t think I would have time to do this but, with your easy recipes, it seems that I might be able to do it and it will actually save me time and money.

Honestly, it is a MUST in our home, I work full time outside the house and 2 kids have soccer every night, too.. this is a LIFESAVER.. trust me…. 🙂 Takes about 15 minutes to put together and often I get ideas on Pinterest and dinner is done in no time… no more drive Thru run and spending all our $$$ on HIGH calorie food… 🙂 hope it works for you, too.. sure does for us.

I was told my daughter just yesterday that I NEVER make spaghetti. (Okay, it’s been a few weeks, but I reminded her never is longer than that!) So the spaghetti bowls are going on the list for later this week.

Cheesy potato and ham soup was our meal tonight. Made the broth over the weekend from the ham bone (finally made the Easter ham I had gotten on sale) and then just had to dump the rest of the ingredients in last night and first one home put it on the stove. Of course, driving home from work it occurred to me I should have put it in the crock pot this morning and it would be waiting for us. Oh, well!
