It sure has been a lazy weekend for me. I spend a lot of time hanging out by the pool and just having fun with the family. Weekends like these don’t happen often so I made sure to enjoy it to the fullest.
What would a weekend be without something sweet to spoil my family, right? I wanted to dish up something different, something fun, something fast and something everyone will eat. I know this was a big task but I pulled a few ideas together and asked everyone for their favorite dessert and with 4 different answers I quickly combined almost all into one delicious dessert.
That’s how my No Bake Chocolate Chip Cookie Dough Cheesecakes was created. I just tossed all the ideas around and put a little of this and a little of that into the mixing bowl and voila, it was a hit with everyone!
What ya say, wouldn’t you grab one if I dished these up for dessert? Now with Mother’s Day just around the corner these would be “THE” perfect portion sized desserts for your cookout and can impress guests and your Mom, too.
These can be made ahead of time a day or maybe even two and will be ready whenever you need a special treat. I also thought they would be great for that midnight sweet craving that we all have, keep a small portion in the fridge and you can enjoy it anytime, anywhere.

As a mom most “free” items are treasured more than anything you could buy. Don’t worry, whatever you come up with Mom will love. This year is a little bitter sweet, my oldest moved out a few month ago and I don’t get to see him as much as I like but I sure hope he will find his way home, even for just a few hours, to spend with me on Mother’s Day. Just having his company around and all my kids together is enough for me to make it the Best Mother’s Day ever.
