What’s cookin’ in your kitchen this week? ~Meal Plan Monday

This weekend flew by again like the blink of an eye. Something has to change; every week we have so much on our plate to get done in those two days and come Sunday night, we all fall into bed just to get back up for Work on Monday. Gee… anyone have the winning numbers for the lottery? I sure would love to have them and get some extra time with my family, I will share…Promise…Smile 

I worked on the office remodel all weekend, yet again. I know …it’s  dragging, but we are getting there and soon I will be able to show all the little DYI projects that we did in the office, but for now I’m just happy to come up with the meal plan for the week and off to the couch I go. Anyone else feel that way today??

Okay, without further ado, here is what we will be dishing up in the Crazy Mom’s house for dinner this week. Would love to hear some of your ideas… and remember if you have any Beef recipes, would love to hear about them. We are still looking for things my Teen with Allergies can eat.

#FrozenFavorites with a Texas Toast Tomato topping

Monday:            Spaghetti in the Crockpot with Texas Toast toped with Artichokes,
                                           Tomatoes & Feta Cheese

Tuesday:            Stuffed Salmon with Hasselback Roasted Potatoes

Wednesday:        Chef Salad and Garlic Bread

Thursday:          Leftovers … Yup let’s clean the fridge

Friday:              Bratwurst, Potato salad and Sauerkraut

Saturday:           Sauerbraten with Bread Dumplings and Salad

Sunday:             Mom’s night off… Dinner at Mimi’s House

That’s it.. now you know what we are dishing up.. a lot of comfort food for me… but I know the entire family will love the plan this week.

    i tried making hasselback potatoes once and they didn’t turn out so well, maybe i needed a different recipe

    Don’t know if I’ll get the kids convinced to do the Texas Toast topped with Artichokes, Tomatoes & Feta Cheese, but sounds like a great side for later in the week for us.

    We did hamburger pie tonight (Bisquick recipe stand by) and tried adding beans to sneak in more fiber but the kiddos were on to me. At least they picked ’em out and ate the rest instead of completely boycotting. Pizza is getting made tonight so it’s ready to be put in the oven by whoever gets home first tomorrow night. Gotta love bread machine crust and choose our own toppings!

    I’d never heard of Hassleback potatoes, but those sound great! I also like the idea of using artichokes and feta to spice up the Texas toast; I always think spaghetti and bread by itself is a little boring!

    I love that you plan your meals ahead of time! I have always wanted to do this and always try to encourage my husband to help me plan it. Now that I am on maternity leave, I think it is about time I start planning ahead like you!
