Lunch Box and Dinner Ideas from Wholly Guacamole

Are you Cookied out yet?? I love my cookies, but I think I can only send so many in my kids lunchbox…:-)

Have you heard of Wholly Guacamole yet? I have to admit, i have heard of them but never tried them before. I’m kind of funny with my Guacamole and I bought a bunch of different ones and did not like them. So I decided that i will never buy a store bought Guacamole anymore. I made my own or picked up a bowl at my favorite Mexican restaurant here in Lakeland.

I love Guacamole and anything Mexican, we eat Mexican food about 3 times a week… So I loved when i came home from work the other day and I had a HUGE box of Wholly products at my doorstep, totally  a surprise, not expected at all…

So I decided to check out their website and I found some really cute ideas that would work for lunch for the little ones.

Take a look at Mr. Grinch… he’s just one of the many sandwiches you can make. Use your cookie cutters and cut out your favorite Christmas shape of your favorite sandwich bread, spread the Wholly Guacamole on the bread and decorate with sour cream, raisins, cranberries, cheese just like cookies… I know my kids will probly eat Guacamole “cookies” rather then eating guacamole on a Taco.

We decided to use the Salsa, the Queso and the guacamole for dinner on Friday Night

We made:

Mexican Tortellini Casserole

1 – 25 oz. package of frozen cheese Tortellini
16 oz. salsa
6 oz. can tomato paste
1 can black beans, rinsed and drained
1 cup corn
1/2 tsp. cumin
6 oz. cheddar cheese

Mix salsa, tomato paste, black beans and corn together in a bowl.  Layer half of the ravioli on the bottom of an 9 x 13 pan.  Layer half the salsa/bean mixture on top.  Then add half the cheese.  Repeat once ending with cheese.  Bake in preheated oven at 350 degrees for about 30 minutes or until hot and bubbly.

For toppings you can use, More Salsa, Guacamole, Queso, Sour Cream, Olives…

It was Yummy… BUT my husband told me later on.. “It was a shame we had to “waste” this perfectly awesome salsa, that would have been wonderful on some chips in this dish… a “normal” salsa would have been okay, too.

We all loved the Wholly products and are totally hooked now. The Guacamole was wonderful, not fake tasting or too creamy at all. It still had the FRESH taste that I like on my Guacamole, this sure will be a keeper in our house now.

Oh do did you know the Guacamole now comes in lunchbox packs? They are perfect to toss in anyone’s lunch and have a quick snack . love it.. I ate all of mine already, totally addicted now..

    I recently tried Wholly salsa and thought it tasted so yummy and fresh because it has been refrigerated.

    I really like the Wholly Guacamole products. They are the closest to what I can get at my favorite Mexican food store. The guacamole tastes really fresh and the salsa is quite good.

      It is my fav., too.. soo fresh tasting and yummy.. 🙂 give me some chips and the Guacamole and I don’t need dinner 🙂

    Never used Wholly products before but I have heard of them… I have had a few friends tell me how fresh and yummy they taste.. would love to try the salsa!
