Breakfast is a big part and should be in every child’s life. What kids eat for breakfast will lay a foundation for their entire day and even their life. As part of our Happy Healthy 2013 plan we have already made a lot of changes in our home and daily life from eating healthier to using greener products to clean the house; our next goal was to make sure that the kids will get a healthy and satisfying breakfast every day before they head out the door.
Sounds great, but reality is that we have one kid leave the house at 6am and then the rest of use leave at 7:20, leaving little room to create a full fletched breakfast each and every morning.
I strolled Walmart the other day to see if I can find some simple yet still healthy ideas for breakfast and besides the usual cereal or breakfast bars my kids really enjoy bacon and eggs. I came across a pack of Jennie-O Turkey bacon and Jennie-O Turkey Breakfast sausage and started to think that both are very healthy (only 2 points per serving on weight watchers for the sausage and only one point per serving for the bacon) and somehow I could sneak them into the kid’s breakfast.
Bacon has been out of reach since we started the Weight Watchers diet, so I bet they will be excited to see bacon in the fridge. I also found a few other ingredients to make some healthy breakfast eggs along with of course, a bunch of other things. I can never leave Walmart and only spend a few dollars; I always leave all my money there. Are you like that too??
Once I got home I surprised my family with a big breakfast, on a Saturday morning. They aren’t used to a big breakfast on a Saturday and loved the idea of eggs, bacon and sausage. Until I pulled out all my ingredients that is… I heard “ohhhh…really??” …. “Ahhm Mom, is this what you are using?”
Well, I was determined to have them eat the Jennie-O Turkey Bacon and proof to them that it really was good and nothing scary at all. So I prepared the eggs with egg beaters and egg whites. Making this a great substitute for real eggs or if you rather have egg whites only. I cooked the bacon and sausage just like I would any other bacon and sausage and the smell was divine. Everyone kept saying “Ohhh it smells like ham…yum”.
Once my bacon and sausage was cooked I put my eggs into muffin tins; now remember when they say only use 3 Tbs, they really mean it… Trust me!!
Add any veggies that you like, we had mushrooms in the house, so in the eggs they went along with the sausage and bacon; top it all with cheese and put in the oven at 350F for 18-20 minutes.
Once it was time to remove the eggs from the oven they looked humongous .. huge…really big. So remember only use 3Tbs per serving of egg beaters; remember I told you so….lol. I loved how easy it was to make the eggs, all at the same time, without grease or oil and no waiting on the stove to flip them. 12 eggs done all at the same time and ready to eat. LOVED IT!!
I paired our eggs with some yogurt and fresh fruit for the kids to enjoy and hubby rolled his eggs and bacon in a blanket (Tortilla shell) and to my surprise all I heard was:
“ WOW” …. “This is really good”…. “I had no idea that Turkey bacon was THIS good”… Should I go on? My family raved the entire time we ate breakfast and now want me to add the Jennie-O line of Turkey products on our grocery list for everyone to enjoy without any guilt or bad stuff. I love being a mom right now!
Best part, besides it all being healthy and good for you, any leftover eggs (or if you make a double patch) can be frozen and kept in the freezer for up to 3 month; making them an easy go to breakfast on the go. In the morning just toss the bacon/sausage eggs in the microwave for a few seconds and the kids can enjoy a healthy and delicious breakfast in no time at all. Make Sunday Breakfast every day of the week. Keep your kids happy and healthy the easy way.

Love the muffin recipe, that’s one we haven’t tried but I know the kiddos will love! We haven’t tried the Jennie-O products yet, so I think that will be a great way to introduce them to our family. Totally looks like a breakfast of champions, for sure!

Ohh Anna-Leigh you HAVE to check out Jennie-O … my husband now swears by it and loves it. He said no other Turkey Bacon can compare..lol… and oh yes, the eggs are very filling.. especially if you don’t follow the instructions and add too much egg.. one was more than enough to fill me up 🙂

Great breakfast! I love that Champions for Kids is encouraging healthy breakfasts for all kids. Its so important. I do enjoy Turkey bacon, we just sampled some in Sams Club this week it was so good!

This sounds delicious. I have used turkey bacon and sausage for quite a few recipes and as log as it isnt stand alone (besides burgers ) it passes the taste test for us. I think it would work great for burritos like you made.
