Do you realize that Thanksgiving is just a few days away? I know, I work up this morning and about freaked out. A few weeks ago I made plans to bring all these fancy side dishes to Thanksgiving dinner and they all sounded beautiful back then and now… OMG, I have no time, time is running away from me and I haven’t even shopped for my ingredient nor have I even printed all my recipes and between cooking, taking kids back and forth to school events, working and visiting our granny at the hospital time totally slipped away from me. We all know it, we call I life!
I know you have one, too and this is when I walked into my local Dollar Tree of all things, yes… Dollar Tree. I hate crowds this time of the year and all the parking lots of the local grocery stores were filled and I knew spending an hour looking for groceries and probably another hour for checking out wasn’t on my to do list, I picked Dollar Tree for all my Thanksgiving preparations this year. Did you know that I was able to create a fun, simple side dish that I can bring to your party for $5? Yup, $5 bucks!! Totally budget friendly and time savvy, too. I was surprised at how many food items my local Dollar Tree actually offered besides all the normal items that we usually get at the Dollar Tree like Seasonal Décor and Kids toys. It’s worth a trip, no long lines and a lot of brand name groceries!
We are bringing a Simple Sweet Potato Casserole and didn’t break our Budget and took us no time to make, check it out and be sure to add it to your must make list for side dishes this Thanksgiving.
- 1 can cut sweet potatoes in syrup
- 1 cup marshmallows (inside the Casserole)
- 1/2 cup marshmallows (as garnish on top)
- 1 cup nuts
- dash of nutmeg and addl. spices like cinnamon or all spice
- spoonful of marshmallow crème
Take all ingredients except the marshmallow crème and the 1/2 cup of marshmallows for garnish and puree in a food processor/blender for a few seconds; I left the syrup in the sweet potatoes. Put everything inside an oven safe dish and put in pre-heated oven 350F for about 20 minutes; remove from oven top with the 1/2 cup of marshmallows and place back inside the oven till marshmallows are brown, remove, top with Marshmallow crème and serve!
Wasn’t that simple? Super budget friendly and was very delicious, the kids asked for seconds and even my husband asked if I could make that more often now. I couldn’t believe that I never made Sweet Potato Casserole before, I always thought it was hard to make or super expensive. I know where to get all my ingredients from now on and best part, Dollar Tree has an unbelievable selection of spices and baking supply, perfect for the Holiday Season.
