I love Sunday Breakfast at our house, we always go all out. We make it special for the entire family and hang out as a family for hours, just sitting at the table and talking and enjoying our breakfast creations. Unfortunately, Sunday is the only day we all have enough time to actually sit down for breakfast. During the week everyone has different schedules and it’s nearly impossible to make something for everyone in time for them to leave for the bus, the office or work.
However, I vowed that this year will be a better year for me and my family and I knew I had to come up with a few changes here and there and I somewhat mastered dinner time, this weeks goal was breakfast. I looked around while shopping at Target to see if something delicious, simple and something everyone would enjoy and I would only have to prepare it once, bonus point would be if I could create it at night and they just grab and go.
I’m somewhat picky and do not like pre-made products nearly as much as I have years ago, making it even harder to come up with good Breakfast idea options. However I was determined and while walking by the end caps the Quaker® Oats containers caught my eye. Mhh, I knew everyone in the house loves Quaker® Oats and a friend vaguely mentioned that she makes overnight oatmeal all the time. I figured that would be the answer to my prayers. I grabbed a container and went on with my weekly shopping.
At home I mentioned it to the kids and they all kind of looked at me like I had all the sudden grown a 3rd eye, they thought I was crazy! I’m not crazy, right? I was gonna proof them different and in the end I will proof to you, too. This would be a great breakfast for the entire family to enjoy no matter how busy you are. I asked the kids for mix in ideas and besides the Blueberries, chocolate chips and cinnamon & sugar the kids had no idea. Which are all good ideas, but I was planning something in my head and I couldn’t wait to try it. Something different, something you wouldn’t necessarily think would work well with Oatmeal.
Yes, you heard that right I wanted Carrot Cake Oatmeal and you know what, it was AMAZING! Moist, delicious and very flavorful. Best part, the recipe above made 3-8 oz jars and they hold very well in the fridge. I now have breakfast for the next 3 mornings. The kids can create their very own flavor combination, which are endless and everyone will have a delicious breakfast every single morning. Takes only minutes to make and you can enjoy it on the go or sitting at the table, eat it cold or warm it up a few minutes. Why haven’t I made that all along? What a time saver and such a great Breakfast for my family to start the day.
The bananas in the oatmeal made it very creamy and smooth, almost like it cooked for hours, what a great texture. You can add your own nuts, seeds, fruits and veggies and yes… Chocolate if you like. We used regular milk, that’s all I had in the house but you certainly can use any liquid of your choosing, a friend mentioned she uses orange juice. I haven’t tried that but if that’s something you want to try, I would love to hear how you liked it.
