When I get home from the office, I’m really not in the mood to cook a big dinner that will take me for ours. I do however want to have a delicious meal on the table for the family. With my son’s major food allergies cooking has been a challenge lately. We used to make a lot of Pork or Chicken and used the #FreshTake packs from Kraft, but since he is allergic to Pork, fish and chicken we had to come up with a simple way to use our beloved Kraft Fresh Take in meals that my Teen could eat.

As many of you know, I love to cook and share some German dinner ideas and that gave me the idea to make a German Potato Gratin and use the Fresh Take Italian Parmesan pack. As I made my grocery list with all the things that I would need and had to get at Walmart, I ran across another challenge, Onions. Yes, he is allergic to onions and that was as big of a challenge as cutting out chicken, pork and fish.

But no worries, I came up with a few adjustments and created a simple German Potato Gratin that was delicious and will have your family ask for seconds.

This is what you need to make the German Potato Gratin

Create a simple Potato Gratin with #FreshTake that will be YUMMY

  • 3lbs. Russet potatoes
  • 1-2 stalks of Leek
  • 2 gloves of garlic
  • 2 cups grated cheese (I used gouda, but your favorite cheese will work)
  • 2 cups heavy cream ( or half and half)
  • 1 –2 teaspoon of broth granulates (I use vegetable stock, but chicken is fine, too)
  • 1 pack of #FreshTake Italian Parmesan
  • 2 Tbsp butter

This is how to make the German Potato Gratin

  1. Cut your leek into half moons and slice, you want to use the white and light green part; the easiest way to clean leek is to cut it all up and dump it into a bowl with cold water; swirl it around a bit and let sit till you are ready to use it. All the dirt will fall to the bottom and your leek will be ready in no time.
  2. Peel your potatoes and cut into thin slicesIMG_1224

  3. Melt butter in a large skillet. Add leeks and garlic. Sautee till tender (smells delicious, too).
  4. Butter the bottom of your baking dish and layer potatoes, shredded cheese and leeks mixture, second layer potatoes and more cheese and leeks mixture; last layer to be a potato layer. You kind of layer it like a lasagna.IMG_1226IMG_1228

  5. Add your broth granules to the heavy cream, mix slightly.
  6. Pour Heavy cream over your potatoes and pad down with a spatula to get all the liquid into the air pockets.  IMG_1231

  7. Now take your Fresh Take and mix the two compartments (cheese and breadcrumb mix), sprinkle all over the top of your Potato GratinIMG_1233

  8. Cover with aluminum foil and put into pre-heated oven (425F) for about 35 minutes or until the potatoes are tender; remove foil and let the top brown for another 10-15 minutes. Let rest for about 5 minutes after cooking to thicken up.

Now the smell is amazing in the kitchen and since my kids love to have a little finger food with their dinner, I also decided to make Parmesan Zucchini Fries. They are super easy to make and won’t take long at all.

Make Parmesan Zucchini Fries

  1. mix up an egg
  2. cut your Zucchini into strips
  3. put the zucchini into the egg wash and then into the Kraft Fresh Take Italian Parmesan Mixture
  4. Place on baking sheet and put into the oven with your Potato Gratin for about 15 minutes or till tender and cheese is melted. YUMM… super quick

Make your Hamburger Patties

While the potato gratin and the Parmesan Zucchini fries are baking in the oven, take some Hamburger meat and mix it with one of the Fresh Take mixtures of your choice, mold into hamburger patties and fry in your pan as usual.

Once everything is done, you will sit down to an amazing dinner that we serve in Germany all the time. My husband and the boys enjoyed the extra flavor Fresh Take gave the dishes and they LOVED it!! I got many raves from the kids and I was excited that I created a meal in no time with our beloved Kraft Fresh Take that my teen can enjoy without any worries about getting a reaction.

I love the Fresh Takes and we like the Italian Parmesan and I think it’s the Four cheese. I have used the Italian Parmesan on chicken, pork chops and so many things. Thanks for sharing your amazing recipes.

We use the fresh take in hamburgers but I would never have thought to make zucchini fries. And guess who has some zucchini setting on her table? 🙂 Please feel free to send me the potato gratin.

That’s a nice meal, and I’m a big zucchini fan, so the fries look especially good to me. I have a package of the Italian Parm Fresh Take in the refrigerator now. I’ll look for zucchini when I’m shopping this weekend. Thanks!

I just realized that you had a separate category dedicated to all things German. Just love it! Thank you so much. Though not German, I was raised there while my dad was in the service and I miss it very much. This recipe looks wonderful. Thanks!
