This is a make ahead meal, I usually make this the night before and put it in the fridge so the next morning, before I run out of the house to get the kids to the bus, the baby to the sitter and myself off to work, I take it out of the fridge and put it in the crock pot. I put the whole crock pot insert bowl into the fridge..
You need:
1 1/2 pound Ground beef 10 slices of bacon, cooked and cut into small pieces1 pack of cheddar cheese 2 large eggs A few Handful of crackers, crushed ( I used the Ritz pretzel crackers this time and my son crushed them in a Ziploc baggie) Mayo, salt & pepper, ketchup, mustard 1 can of French fried onions ( not really a must, I forgot them last time…OOPS) 6 potatoes , cut in chunks
garlic and seasoning for the potatoes
HOW TO:
1. Mix all ingredients ( except the Fried Onions and the potatoes) into a meatloaf., including the bacon and the cheese; Add as much or as little of the mustard, ketchup as you want, add your seasoning just like you would for a meatloaf. Once the meatloaf is done form it into a big round ball and set aside for a few minutes.
2. Add the washed, cut up potatoes to the crock pot, drizzle a little bit of oil over the potatoes, stir, add any seasoning that you may like, garlic, salt, pepper etc…
3. Take two long Aluminum sheets and fold each sheet up about 1 inch in width, once you folded both of the aluminum sheets, sit them on top of the potatoes in the crock pot, they will hold your meatloaf nice and comfy on top of the potatoes while cooking….
4. Add your Meatloaf on top of the Aluminum straps, take mustard and ketchup and paste on top of the meat to keep it moist …then close the lid.. Let cook for 6-8 hrs. on low or 4-6 hrs on High….
5. If you are gonna add the french fried onions, add them to your meatloaf about 30 min before you are ready to eat….
